I love binge watching old Christmas movies, mostly from the 80s and 90s. How about you?

One movie, The Holiday, holds a special place in my heart.

You know that scene where Jack Black and Kate Winslet make fettucine alfredo? Suddenly hunger struck; I NEEDED creamy pasta.

I wasn’t really feeling like alfredo sauce, so I started Googling around for other creamy pastas.

And then behold! I found the recipe of my dreams: creamy bacon carbonara! Oh. My. Goodness.

I excitedly leapt into the kitchen to start whipping up this masterpiece.

Now obviously, being gluten free calls for a gluten free pasta. Luckily I had my favorite spaghetti on hand, Schar Gluten Free Spaghetti!

I haven’t found many Schar products I DON’T like. But I’ve had some bad gluten free pastas from other brands. But Schar’s is spot on. It definitely holds up well to my creamy bacon carbonara.

I have trouble finding it locally, so I often order it online. I stock up in bulk when I order online!

Alright, onto the recipe!

Gluten Free Creamy Bacon Carbonara

Ingredients:

2 Eggs

1/4 Cup Heavy Cream

1/3 Cup Shredded Parmesan Cheese

Gluten Free Spaghetti (as mentioned, I prefer Schar Spaghetti)

4 Strips Bacon

Salt & Pepper

This is an incredibly easy dish to throw together if you’re ever in a pinch with unexpected guests. The depth of texture and flavors is really remarkable; creamy, smokey, and salty, this bacon carbonara is real deal comfort food.

The first step is to start making your sauce.

Whisk together the two eggs, 1/3 cup shredded parmesan cheese, 1/4 cup heavy cream, and a dash of salt and pepper

**Note: you can substitute Robusto, an aged dutch cheese, in place of the parmesan for an added depth of flavor. It can be hard to find, but if you have access to it, it’s lovely in this dish.

Generously salt your pasta water and bring to a boil. Add your pasta and cook according to the directions.

Fry your bacon until it’s crisp. Drain on a paper towel and then chop the bacon into small bits.

Once the spaghetti is done cooking, drain and add back to the pot. Be sure to remove from the heat!

Whisk your sauce once again and then pour into the spaghetti.

Stir the spaghetti and sauce, making sure to coat all of the noodles.

Continue stirring the spaghetti and sauce while off the heat for another minute, carefully turning the noodles to coat them.

Now return the pot to a medium to low heat and continually stir the pasta and sauce until the sauce thickens. The sauce should be sticking to the noodles at this point.

Don’t cook on too high of a heat, otherwise you’ll end up with scrambled eggs!

Once the sauce has fully thickened, remove from the heat and gently stirred in the chopped bacon.

Twirl the pasta using two forks to create a nest, and plate neatly onto a plate. Sprinkle with more cheese.

We love a good carbonara, and it’s one of the things we’ve missed most going out to eat while gluten free. But this bacon carbonara, oh man, it’s DELICIOUS. Hopefully we’ll see more gluten free carbonaras showing up on restaurant menus.
