After a little over a week, I am happy to report that my cold (and Mason's!) is finally losing steam! Praise the Lord - Hallelujah, I am actually starting to feel like myself again.
And don't you know that my little rascal slept in this morning, giving me plenty of time to plan our menu for the week!
I don't know if it's a good idea or a really terrible idea, but I've decided to totally change things up this week and prepare 4 new-to-me dishes. I typically like to try one new recipe a week, but I've been feeling bored and uninspired with all my old recipes. Time to shake things up.
Luckily most of the recipes are simple, and some of the prep can be done ahead of time, so hopefully I'm not setting myself up to fail. I did end up taking one recipe out (Pork Chops) to help save on the grocery bill and ensure that we use all of our leftovers.

Tuesday: Crockpot Buffalo Chicken from Skinnytaste
Wednesday: Buffalo Chicken Mac and Cheese with leftovers from Tuesday
Thursday: Chicken Fajitas from Iowa Girl Eats
Friday: Homemade Pizza with Salad
Skinnytaste and Iowa Girl Eats are two of my favorite blogs for recipes. I've never tried a recipe from either of these talented women that didn't turn out great!
Plus, it's going to be really really cold in Durham this week, and these warm, comfort meals sound incredible!
