Going to the grocery store with Baby Mason terrifies me.
I’m not scary!
I’m not sure if I’m afraid that he’ll have a meltdown and cry inconsolably, or I’m worried about being able to maneuver all the grocery bags in to the house. Honestly, I have no idea what exactly makes it feel like an impossible task. I do fear him needing to nurse and then being stuck in the car in the grocery store parking lot for an hour. Yes, it takes my baby an hour to breastfeed – that’s a story for another day.
But even when he’s fully fed, going to the grocery store seems like a HUGE obstacle and most days I don’t feel ready for the task.
So as the fridge dwindled and our pantry became empty, I had to go in to the depths of the freezer and get creative for supper last week.
Man, I have never been so happy to use a pound of frozen ground turkey!
I had filed this recipe away under sounds good but most likely tastes bland on Pinterest – boy was I wrong!
These meatballs are bursting with yummy flavor AND they were so darn easy to make!
They would be awesome served with brown rice and sautéed broccoli. I had neither of those things and served the meatballs on top of rice that you use to make homemade risotto – but who cares! These meatballs would be good served on top of oatmeal – that’s how good they are!
Plus it was a very easy recipe to convert to gluten free.
Simply use Kinnikinnick Gluten Free Panko Breadcrumbs and Gluten Free Tamari instead of soy sauce.
I will definitely be making this dish again…..
just as soon as I make it to the grocery store!
