Gluten Free White Pesto Pizza

Happy Wednesday friends!

Yet another week flying by. I was hoping to write this post yesterday, but you know the last thing I want to do when I’m trying not to throw up in the morning – write a blog post about delicious pizza.

Luckily Baby Ravelli is taking it easy on me this morning, and I can tell you guys ALL about this:

Delicious gluten free pizza!

I’ve had a box of King Arthur Gluten Free Bread & Pizza Mix in my pantry for months, and I decided to finally use it this week.

I picked up a ball of local mozzarella cheese at the farmer’s market and perused Pinterest for recipe ideas. Then I remembered the nearly empty jar of pesto in my fridge and decided to keep it simple.

I prepared the crust according to the pizza crust instructions on the box. NOTE: If you use this mix, give yourself plenty of time! This crust has to rise TWICE for a total of an hour of prep time before you’re ready to bake.

It should be said too that this crust is a sticky mess! I used plenty of olive oil to pat it out with my fingers, but you will definitely be amazed by how sticky it is. Just keep at it and use your fingers to spread the dough on your pan.

Once I had pre-baked the crust, it was ready to top! I spread the pesto on the crust and scattered the thinly sliced mozzarella, leaving a bit of space in between for melting. I baked the topped pizza for 8 minutes, or until I noticed the edges browning and the cheese had melted.

Parrish and I were both impressed with the crust itself. It was thick and chewy with pockets of olive oil.

The next time I use this crust, I plan to mix some Italian spices and cheese in to the mix before baking. I think that would help with the overall flavor of the crust which was a little bland. Luckily my toppings were not bland at all. I mean really, it’s all about the cheese:

If you have access to local, FRESH mozzarella you should definitely try it on a pizza. Yes, it can be a bit more expensive that shreds from the grocery store BUT it’s TOTALLY worth it!

This topping combination is definitely a favorite. I love pepperoni but there is something about a white pizza!

Friday Favorites–First Edition

Happy Friday friends!

I don’t know about you guys, but for me, this week has FLOWN by! I worked this past weekend and took Monday as my day off, so all week I felt like I was a day behind. Yesterday felt like Wednesday, so it was a nice surprise when I kept being closer to the weekend than I thought!

Since today is Friday (not Thursday) I thought I would share some of my favorite things from this past week!

Favorite Summer Soup

I bought this soup forever ago at the local farmer’s market and finally got around to eating it yesterday. Why in the world did it take me so long?!

So delicious. I enjoyed the soup chilled, which was perfect timing because we’re right in the middle of a heat wave here in Durham.

Honestly, between lemonade, salt & vinegar almonds, and this soup, I would be surprised if Baby Ravelli didn’t come out of the womb all puckered up! This baby LOVES sour!

Favorite Breakfast

Currently I get to enjoy two treats in the morning: First Breakfast & Second Breakfast. I eat First Breakfast within five minutes of waking up to help ease morning nausea. My favorite this week:

Udi’s Millet Chia Bread topped with avocado, bacon, cabot cheese shreds, and an over easy egg.

I was BEYOND thrilled when my mid-wife told me that I could in fact continue to enjoy over-easy eggs. And while I can’t cook it myself – the smell of cooking eggs is DEATH for me right now – I did enjoy this breakfast three times this week!

Favorite Hydration

I shared this new favorite – 365 Coconut Water – on Instagram yesterday (glutenhatesme). I’ve been having trouble with 24-32 hour headaches on days after I exercise. Most likely due to dehydration, I was having trouble getting enough water in. So I added Coconut Water in addition to my gallon of tap water and it has really helped.

I love the Whole Foods brand – and the price is just right!

A Reflection on Eight Years Gluten Free

Have you ever been so busy that you forgot a special occasion?

A special event? A birthday? Perhaps, your own gluten free anniversary?!

You don’t celebrate your gluten free anniversary?! No?


Well, honestly, I don’t either. But I do like to take a moment each year to reflect on how far I’ve come in my gluten free journey. Particularly how much EASIER being gluten free has gotten over the years.

But this past summer I forgot! I marked EIGHT YEARS gluten free and I totally forgot. I blame Baby Ravelli. Totally worth it, but completely pre-occupying my time!

The cool thing about my GF Anniversary is that it also marks my Blogging Anniversary!

Always Time for Pancakes

Happy Monday friends!

I can’t believe that another week has flown by AND that August is nearly over! We’re really starting to ramp up at work – our busy season typically started at the end of October but this year it starts the FIRST weekend in October – so I’m already feeling a little bit behind!

Luckily I worked this past weekend, so I had some time to get tasks completed. I ALSO had time Sunday morning to indulge in one of my favorite breakfasts:

I woke up yesterday with a serious craving for pancakes but I lacked the motivation to drive to Harris Teeter. We have a Food Lion really close to our house, but I wasn’t sure if they would have any gluten free mixes. I thought, if anything, they might have Gluten Free Bisquick – so I decided to try.

Imagine my glee when I found a bag of Pamela’s Gluten Free Pancake & Baking Mix! My absolute FAVE gluten free pancake mix!

I love the almond flour used in the mix and the thin crisp pancakes you get when cooking. I mean, LOOK at this stack!

Hidden Veggie Creamy Alfredo

I love vegetables.

Versatile. You can eat them in so many different ways! Raw, Sautéed, Steamed, Grilled, Baked, Chopped. The combinations are endless.

Diverse. There are SO many different types of vegetables! So many colors, flavors, textures. How could I ever get bored?

Gluten Free. It’s hard not to love something that’s naturally gluten free and I can grow in my own yard.

So then tell my WHY oh WHY does Baby Ravelli seem to hate vegetables?

Even though my all day nausea has dissipated, I do still get waves of puking or gagging. And you know what really makes me gag?


Salads. Tomato anything. Broccoli, Carrot Sticks, and Red Pepper. Basically any raw vegetable.

I swear, I feel like I’m already one of those parents that tries to sneak veggies in to their kid’s food! Spinach in the smoothie, and vegetables in the alfredo sauce!

Bland, creamy foods sound best to me right now, but I know that I need to up my nutritional content. Noodles with plain sauce were fine during the first trimester – heck, I was just trying to survive! But now that I’m 15 weeks (!!!) I want to at least try to add some vegetables back in to my diet – even if that means hiding them.

Thinly sliced Baby Portabella Mushrooms sautéed low and slow with garlic sautéed spinach and tomatoes.

The mushrooms I don’t have to hide. I adore them! Spinach and tomatoes….not so much. But covered in alfredo sauce:

Creamy and Delicious!

Towards the end of my bowl I did have to mentally prepare for bites with tomato (ugh) so I might back off of tomatoes for a week and try again. But the spinach was great and of course I ate every single mushroom!

I am currently obsessed with the Schar Spaghetti Noodles. They do take quite a bit longer to cook, but they hold up so well!

Three Things I’m Loving Lately

Happy Tuesday friends!

I have a lunch meeting outside of work today, so I’m enjoying a little extra time at home before I have to go in. Which includes a little update for you guys!

Three Things I’m Loving Lately:

Let’s start with a recap of a delicious meal I enjoyed over the weekend:

Roasted Spaghetti Squash topped with Classico Sweet Basil Marinara, Cabot Mozzarella Cheese, and DELICIOUS beefy meatballs. On the side, a few slices of Imagine That Gluten Free baguette.

Once again I snagged the last baguette at the Durham Farmer’s Market. Lucky me – I love that bread!

I found another new love over the weekend too:

Super cozy maternity jeans from H&M!

And friends, I found these jeans just in time:

Because when I woke up Sunday morning, Baby Ravelli had popped!

The jeans (and one pair of shorts) are the only item of maternity clothing I currently own, so I was more than excited when my amazing MIL treated me to a mini shopping spree online at Pink Blush Maternity Sunday morning.

I can’t wait until that box gets here!

The third thing I’m loving lately will come as no surprise: ZUMBA!

I am SO excited that my favorite teacher Lu is back from Maternity Leave. Never in my life have I met a woman like Lu. She has the most amazing smile and energy. When you dance, even if you’re huffing and puffing, you can’t help but be happy.


LOVE her! And Zumba!

I did end up having to modify a few of the moves. Jumping is totally out of the question – nope – that does not feel good. I also had to take a bathroom break halfway through….so that was new. But even though it was modified, I still had a blast!

I also have a few new-to-me workouts planned for the rest of the week. I love mixing things up – especially since running isn’t exactly comfortable right now.
