Here in NC, we don’t get much of a Spring Season.
We might have a few weeks of amazing weather days broken up with chilly rain, but for the most part, we catapult from winter straight in to summer. And here in the South, Summer means HUMIDITY.
If you live in the South, then you’re shaking your head in agreement. Yep. And if you live in the Triangle of NC, then you already know that our seasons are: Winter, Mini Spring, Humidity, Amazing Fall. Not that I’m complaining. After the looooong winter we had, I’m ready for Summer. Humidity or not.
In preparation for the weeks ahead, last night I culled through old Gluten Hates Me Dinner Posts looking for forgotten recipes for meal planning. One of the things I love most about writing a blog, is revisiting delicious meals – and knowing that I can make them again!
I can’t wait until corn is in season! And TOMATOES! I already have two dishes waiting for the first tomato harvest:
Tomato Strata with local Farmer’s Cheese
I’m also anticipating the first harvest of watermelon.
Watermelon Basil Salad. It sounds sort of strange, but I promise it’s delicious!
