Super Duper EASY Gluten Free Supper

Since we had SO MUCH FUN on Vacation Week, Parrish and I were a bit more flexible with our “entertainment” budget. In order to do that, we had to move money over from our grocery budget, so this week’s meals had to be….creative.

I scoured our pantry and realized we had most of the ingredients to make Easy Oven Risotto. BUT fresh chicken wasn’t in the budget. I knew it needed a protein, so I went with cannellini beans instead. Full of protein and fiber AND easier on the budget!

image (3) Just like with the Easy Oven Risotto, start by preheating your oven to 400 degrees. In a brownie or roasting pan, melt 2 tbsp. of butter.

Add in one small white onion diced, and pop back into the oven for five minutes. Then add in one cup of Arborio Rice, 2 1/2 cups Gluten Free Chicken Stock. Stir to combine. Cover the pan with aluminum foil and pop the covered pan back into the oven for 35 minutes.

While the rice is baking, melt one-two tbsp. butter in a cast iron skillet over medium heat. Add in 2 cups sliced mushrooms and sauté the mushrooms until they begin to brown.

Add in one can of drained cannellini beans and stir to combine. Continue cooking and stirring the beans and mushrooms for five minutes. Then add in one cup of cherry tomatoes chopped. Lower your heat to medium low, stirring occasionally, letting the flavors meld.

When the rice is finished, remove the aluminum foil and fluff with a fork. Add in the mushroom mix and one to two cups cubed cheese of your choice. I used smoked gouda that we had on hand.

Pop back in to the oven for a few minutes, just long enough to let the cheese melt. Mmmmm melty pockets of cheese.

You’re ready to serve!

Option: Top with balsamic glaze. YUM.

I LOVE oven risotto. It is SO EASY to make and the leftovers are even more delicious!

An Udi-ful Day – Breakfasts

Do you know what I love about Udi’s muffins, bagels, and breads?

When I eat them, I forget that I’m eating gluten free.

Do you know what I mean? Some gluten free substitutes I’ll be eating and it and think “This tastes good for gluten free.”

But when I eat an Udi’s bagel, I just think “This tastes good.”

Especially the Double Vanilla Muffins.

Oh man these muffins! Do you remember the Sara Lee Pound Cake in the freezer section? It came in an aluminum tin; I LOVED it as a kid. Well friends, these muffins taste IDENTICAL to that cake! The flavor and texture are perfect. Just perfect. Hmmm… now my mouth is watering!

Most mornings this summer I’ve been in a rush to get to bootcamp before work. That’s why I LOVE Gluten Free Breakfast Parfaits.

Fluffy gluten free Udi’s Gluten Free Double Vanilla Muffins, sandwiched with creamy Chobani Greek vanilla yogurt and fresh strawberries and blueberries.

You don’t need no stinkin’ gluten!

Oh yeah. It’s good. And it takes NO TIME to put together. I make it the night before, pop it in the fridge, and it’s good to go in the morning.

In a mason jar, start with a layer of yogurt. Choose your favorite! I had Greek Vanilla Yogurt on hand, but feel free to mix it up! Next come the berries. Again, feel free to customize the layers to your own tastes. I love fresh strawberries and blueberries when they’re in season. Your third layer is a bit of  gluten free vanilla muffin. Then repeat.

I sliced my Udi’s gluten free muffins:

to make the layers. But you could also crumble the muffin for the layers. Your choice! I sliced because it was less messy and helped maintain the layers.

Oh the layers.

Full of fiber, protein, and antioxidants, it’s like eating a dessert!

On mornings when I have a bit more time, I love to make my favorite savory breakfast.

It actually only takes about 5 minutes to make: One half of an Udi’s Gluten Free Everything Bagel topped with smashed avocado, fresh tomato, an overeasy egg, and Cabot cheese.

YUM!

Just using one half of an Udi’s bagel helps save calories and $$, and it’s just as filling when it’s topped with healthy fats!

On SUPER RARE mornings when I have nothing but time:

Udi’s Gluten Free Breakfast Pizza – I mean seriously. Cheese, tomato, red onion, avocado, overeasy egg, and bacon! SO GOOD!

Why am I writing this blog post before I’ve had breakfast?!

Welp, It’s Monday

Is there any sadder Monday than the Monday after vacation week?

Nope.

I’m trying to move on….but darn it, I miss vacation week! Even though it was mostly a stay-cation, Parrish and I still had an amazing time!

The best idea we had, was making a list of things we wanted to do during our week. That way, we didn’t get sucked into doing typical things, like cleaning or watching TV. Plus we’re lucky that we live in the triangle of NC, because that means the beach is only 2 hours away!

 

I’m planning a separate Wilmington Gluten Free post because I found some amazing new-to-me places to eat! Look for that later in the week.

We also went to Jordan Lake twice, which was simply beautiful. Parrish and I are definitely water people, so being out on the lake is a perfect day. 

Especially since I FINALLY caught some fish!

I’ve been out on the lake a dozen times and had ZERO luck. Saturday I caught two! FINALLY. Success.

We also hit the batting cages one afternoon. I can’t remember the last time I swung a bat….

More than the activities, I loved spending a full week with Parrish. We’re getting close to anniversaries of tough times last year, and it felt good to just recharge with each other.

But now it’s Monday. And with that, it’s time to hit the gym for an early morning workout aka work off that vacation wine!

Many of the hottest and newest gluten-free foods, including products from more than 20 local vendors, will fill the exhibit hall at the Durham Convention Center in Marriott Center City on Saturday, August 17, 2013 from 10 a.m. to 4 p.m. for the Gluten & Allergen Free Wellness Event, and I am DEFINITELY going to be there!

I mean…an entire room of foods that I can eat? Count me in!

Seriously…when is the last time you went to an event and could eat everything!?!

Organized by ECHO Event Solutions (ECHO), the event is sponsored by Udi’s Gluten Free, Glutino Food Group, Enjoy Life Foods, Bone Suckin’ Sauce, Earth Family, Gluten-Free Buyer’s Guide, and Earth Fare. 

The event is open to the community, and it caters to those who avoid multiple allergens, such as gluten, dairy, soy, nuts, grains, etc. TONS of vendors will be there sampling new and favorite gluten free foods. You can find a list of the vendors HERE

I can’t wait to try gluten free foods without having to buy them first!

#RavelliVacay2013

Woo Hoo! Vacation Week!

As it turns out, planning a vacation when you’re the boss isn’t all that easy. Luckily I work with some amazing people, and we’re making it happen!

For the Ravelli’s, this year will be a…staycation!

But we’re really going to treat it like a vacation.

We both planned five things we want to do for the week; five things that aren’t in our typical routine!

1. Make s’mores

2. Go the the beach

3. Go to the lake

4. West End Wine Bar afternoon

5. Durham Bulls Game

6. See Grandma Gruelle

7. Eat a fancy dinner

8. Play cornhole at our neighborhood bar

9. Go to the Batting Cages

10. Enjoy Quiet Time

Gluten Free Creamy Pasta – sans Alfredo

When I got home from Zumba last night I was STARVING!

I’ve had a super active week: Monday Bootcamp, Tuesday Zumba, Wednesday Core and Shoulders, and then Thursday Zumba. So much fun – but leaving me more than a little bit hungry!

I typically have a recovery smoothie after Zumba. I don’t get home until 8:30, and I don’t love going to bed on a super full stomach. But not last night. Last night I was on over drive and ended up making something DELICIOUS!

I started with 1/2 cup of Schar Gluten Free Multigrain Pasta:

I saw this at my Harris Teeter last week and decided to give it a try. I love that you can see the buckwheat in the penne!

While the noodles cooked, I grilled broccolini, diced some grilled chicken I had prepared the night before, and shredded a little bit of Cabot 50% Light Cheddar.

Max was very interested in this part.

I chopped the broccolini into small bite size bits, and diced the chicken as well.

Once the pasta was ready, I drained the noodles and added in the chicken, cheese, and broccolini.

I also added in two tablespoons of 0% fat Greek Yogurt that I had mixed with salt, pepper, and garlic powder.

And done!

So good! Creamy, yummy goodness with only a small amount of carbs. Tons of protein from the yogurt and chicken. Fiber and fullness from the broccolini.

Udi’s Gluten Free Frozen Pizzas

When Parrish has a late meeting or a boy’s night, I often just skip making a full meal. I’ll make a quick salad or a bowl of popcorn, and catch up on my television shows that he doesn’t like to watch. (Vampire Diaries, Pretty Little Liars…etc)

But a few weeks ago I decided that I really wanted a pizza. So I stopped in to Whole Foods on my way home, which is ALWAYS a mistake! NEVER go to Whole Foods hungry.

Anyway, I ended up getting stuck in the aisle. I just couldn’t decide between Udi’s Gluten Free Frozen Pepperoni and Margherita pizza!

Yeah, it didn’t get much easier when I got home either. SO I made both!

The nutrition facts for each are WAY BETTER than the Against the Grain pizzas, so I felt ok with my possible splurge.

As it turns out, I liked the Pepperoni WAY MORE than the Margherita.

The Pepperoni Pizza just had an AMAZING amount of flavor! I was shocked by how DELICIOUS this pizza was!

And that’s not to say that the Margherita Pizza wasn’t good.

It was…fine. It had good flavor; the crust was great, and I’m assuming for a Margherita style pizza, it was good.

But the pepperoni was out of this world. I will never get stuck in the aisle trying to decide again!

Gluten Free Buttery Bruschetta

Two nights ago, Parrish and I enjoyed by far one of our favorite summer meals:

Gluten Free Bruschetta!

In fact this is the third time I’ve made it this summer! We’ve been cursed blessed with a ton of rain here in NC, so our tomato plants are booming. And the basil plant is more like a basil bush!

Gluten Free Bruschetta is super easy, and you can change up the ingredients depending on what you have on hand. Don’t have onion? Use a pepper. Don’t like onion? Skip it! No garlic? Add a shallot. It can really be whatever you want!

Start with a gluten free baguette. I love the Schar brand, but I couldn’t find it this week, so I used Against the Grain. I cut it into slices and nuked it for 30 seconds to soften the loaf.

Then I melted 1-2 tbsp. of butter in a cast iron skillet and soaked the bread in the melted butter. On medium heat, the baguette will brown nicely in the butter.

I mean…YUM!!!

While your bread is browning, roughly chop tomato and white onion. You want more tomato than onion, about a 1 to 3 ratio. Transfer to a mixing bowl. Add in a handful of chopped basil, 1-2 cloves of minced garlic, a swirl of extra virgin olive oil, and salt and pepper.

Place your browned bread on a baking sheet, top with the tomato mixture, and sprinkle with a small amount of shredded cheese. I used Cabot Cheese 50% Light Sharp, but you could use whatever you have. Broil on high just until the cheese melts. Drizzle with balsamic glaze before serving.

Enjoy! Parrish and I serve this with a simple salad, and are perfectly content and full. Less than 30 minutes from the chopping board to the table!

I will say…the one thing about this recipe… is that it drives Max and Hazel crazy!

They are total carby bread monsters, but we all know that Against the Grain bread is far to expensive to share with pups!

There are so many Gluten Realizations in the beginning, and I remember feeling totally devastated by this one. As it turns out, tamari is WAY better!

It’s fun to look back at those beginning posts. I was terrible at taking pictures, and pretty much every post was like “ Really? I can’t eat this?” or “Is this any good?”.

I’m so thankful for each and every one of you. Reading blogs and writing my own blog opened up an incredible community for me, and I am always grateful for that. I couldn’t have made it through those first years without you.

So I don’t really see this as MY anniversary of writing this blog. I see it more as OUR anniversary of spending time with each other.

I celebrated earlier today with an AMAZING gluten free cupcake from Daisycakes.

I shared it with my friend Katie, and it was SO DARN GOOD! Seriously. Look at the frosting!

What Could You Cook in Five Years

Tomorrow marks my FIFTH year writing this blog, as well as 5 years that I have been gluten free.

To me, it’s hard to believe that it’s only been 5 years. I feel like I’ve been gluten free for way longer. Then again, a lot has happened in those 5 years. I moved, got engaged, got married, bought a house, graduated from college, and so much more.

A lot can happen in 5 years!

And you know what, a lot of GOOD gluten free FOOD has happened in those 5 years too. Like…

First made in 2009, these onion rings are a real treat! There truly is nothing like a beer batter. Crunchy and moist with a sweet, tangy flavor. I love these rings! Recipe here.

Gluten Free Beer Cheese Hush Puppies are pretty amazing too!

Spicy Pepper Jack Cheese really sets these hush puppies apart. First made in October of 2012, I can remember being totally shocked when these turned out well! As a Southern girl, a hush puppy has always been a staple. And as it turns out, pretty darn easy to make gluten free.

Gluten Free Taco Cups!

Definitely one of my favorite recipes from the past 5 years. I mean, what’s not to love?! It’s basically a tiny taco in a cute little cup. I love bite size food!

And I’ve loved spending these past 5 year with YOU!
