Potatoes and I have a love – hate relationship.
I love them but they hate my pancreas!
When I first received my Celiac diagnosis, potatoes were my go-to food. I knew they were gluten free, plus they were easy to prepare. But all that starch turned in to way too much sugar, and I started to see the side effects around my waist.
These days, I aim to only eat potatoes once a week. (if that) So I always want them to be delicious – if I can only eat them once a week it better be worth it!
Thank you Pinterest for showing me how to make an INSANELY delicious Twice Baked Potato at home!
Stuffed with pillowy potatoes, leeks, and cream cheese – YUM!
I followed this recipe from Food Network and was WOWED by the results!
I even microwaved my potatoes instead of baking them for the first step, bringing my prep time down from 2 hours to 30 minutes.
I will definitely be making these again!
