Gluten Hates Me in a Flash – and Friedman’s

You know what I love about Instagram and Facebook?

Aside from it allowing me to be the nosey person that I naturally am, it also lets me share with you guys in real time. Let’s be honest, I don’t always have time to blog.

Man oh man. What a CRAZY fun trip!!

It was the perfect balance of work and play, with tons and tons of food!

You guys gave me great recommendations, and I thought it would be nice to recap the one that was recommended the most.

Friedman’s Lunch in Chelsea Market has an INCREDIBLE gluten free menu! Essentially you get the one basic menu, but then there are dots by every item they can prepare gluten free. And that my friends, is nearly every item!

The atmosphere is great: clean, rustic, fresh. Loved it! My colleague Katie and I sat down at the bar and she ordered what she declared to be the best iced tea she had ever tasted! Secret: mint.

We both ended up ordering a B.L.A.T. with chicken. Bacon, lettuce, avocado, tomato on gluten free bread with an herb mayo and roasted chicken.

Seriously. Seriously.

A two-handed DELICIOUS sandwich! I ate every. single. bite. I kid you not. It was a perfectly balanced sandwich, and the gluten free bread was incredible. You would never know it was gluten free!

I cannot wait to recreate this sandwich at home! Homemade herb mayo?!? Yes please. I want to drink it up!

And I pretty much did. My face was a giant mess the entire time I was eating but who cares! That sandwich was DELICIOUS!!!!

Gluten Free Banana Oatmeal Muffins & A Winner

Good evening lovely friends! This afternoon I made a delicious breakfast muffin to take on my trip to NYC and I couldn’t wait to share it with you guys!

The Assistant Director of the organization I work for, Katie, has an amazing chef for a sister. And her sister also has a few food allergies, gluten being one of them. These muffins were a yummy treat Katie shared with me at work, and I knew I had to recreate them at home!

The basic recipe does not include peanut butter. However, I was low on bananas. So I added peanut butter to make up for what I lacked. If you don’t like peanut butter then stick to the original recipe. If you love peanut butter, then leave it in. I LOVE it!

Gluten Free Peanut Butter Banana Oatmeal Muffins

adapted from Fitness Magazine

You’ll need:

  • 3 cups gluten free rolled oats (I used Bob’s Red Mill)
  • 1/2 cup packed brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 egg whites
  • 1 egg
  • 1 1/4 cup skim milk
  • 1/2 cup mashed bananas
  • 1/4 cup peanut butter
  • 1 tsp. vanilla extract (make sure your bottle says gluten free)
  • 3/4 cup chocolate chips (I used dark chocolate)

Preheat oven to 350 degrees.

In a food processor: oats, brown sugar, baking powder, and salt. Pulse the dry ingredients until they are well combined and the oats are coarsely cut.

In a separate mixing bowl, whisk the egg whites, egg, mashed banana, peanut butter, milk, and vanilla. Use your whisk to break up the peanut butter. It will take a few minutes to well combine the lumpy banana and peanut butter.

Add the oatmeal mixture to the wet ingredients. Mix well and then add in the chocolate chips. Mix to combine.

Combine the oats, brown sugar, baking powder and salt in a large bowl and stir until thoroughly mixed.

Spoon the oatmeal mixture into greased cupcake liners. Fill the cups pretty full – these muffins don’t rise a ton.

Bake 22-25 minutes, or until the tops begin to brown and a toothpick inserted in the center comes out clean.

** If you make mini muffins, bake for 20 minutes.

I like making a mixture of big and little muffins. It helps with portion control…PLUS the little ones are so dang cute!

A Savory Southern Breakfast

Thank you guys so much for your recommendations for my NYC trip this weekend! Fingers crossed all this winter weather doesn’t cancel my flight!

I am having one of those rare mornings; one of those mornings when you actually have time and energy to relax and enjoy yourself.

I’m pretending that a few piles of laundry don’t exist until after lunch time. I am giving myself absolutely NO responsibilities until 12noon. It’s silly, but telling myself that I don’t have to do or worry about anything for a given amount of time actually works for me!

A highlight of my free morning: writing this blog post and enjoying a very slow, very Southern breakfast.

2nd cup of coffee, yellow corn grits (Arrowhead Mills gluten free) and a few pieces of baked gluten free chicken tenders (my favorites)

I wish my waistline and timeline allowed me this breakfast every morning! Then again, having it be a rare treat makes it even more delicious.

I’m also doing some important catch up on all my guilty pleasure television: The Lying Game, Pretty Little Liars, Bunheads, Greys Anatomy, and Parenthood.

Yeah…I’m across in the board in television that rots your brain. No judging!

And I may or may not be doing mindless online window shopping….

Gluten Hates Me and the Big Apple

I am getting SO excited!

In exactly two days I will be landing in NYC for the weekend!! And even though it’s a buying trip for work…WHO CARES! It’s going to be So. Much. Fun!

Even though it’s supposed to snow on Friday…AND this is the weather forecast:

But I don’t care!

New York City aka A Gluten Free Foodie’s Mecca is full of LOTS of yummy options for gluten free folks!

So where do you suggest? Any favorite places?

My hotel is in the Midtown area, right off of Times Square. BUT I’m totally willing to pay an arm and a leg for a taxi if it means an amazing meal.

I mean…it’s all about the food right?!

My Current FAVORITE Gluten Free Lunch

Yesterday was a LOOOOOOONG day.

I had my first board meeting for my new job. Yep. I don’t have one boss – I have seven! Luckily they’re all great folks with a passion for Fair Trade! I was nervous. Excited. And bogged down with the yearly budget!

Luckily I had time to make it to the gym for an hour. Nothing like putting the Arc Trainer up to 100% resistance to clear your mind!

 

Unfortunately I don’t have any exciting food to share with you. I spent the majority of my day yesterday working through invoices and blowing up One World Market’s facebook with beautiful nerdy pictures.

I did enjoy my absolute FAVORITE lunch yesterday:

Pacific brand Organic Chicken and Wild Rice Soup!

This soup is so flavorful!! I love the broth – all the chicken bits are good – and the rice gives it a great texture!

I’ve only been able to find this soup at Target, and be sure to check and make sure the gluten free is printed on the box! All of their soups aren’t gluten free but several of them are.

You know the funny thing about this soup?

Nearly a year ago I listed my Top FIVE Favorite Fast Foods here, and this soup was one of them!

Check that off the List

Hair Did!

I went to a new-to-me salon here in Durham: Funky Monkey. I had met one of their stylists at work, and loved her hair! I’m  so excited to have met Yumi, because she did an amazing job!

I asked her about length, style, etc. And we both decided to keep the length but add in some fun layers. She was also able to texturize my hair and take out a BUNCH of the weight! My pony tail is still long but it’s tiny!!

Also, is there anything better than getting your hair washed and dried by someone else? I love getting a blow out – my hair always looks WAY better than when I style it at home!

I was pretty dumb about eating yesterday though.

My appointment was at 11am. So I ate breakfast around 9 and then went to the gym. I got out of my hair cut at 12:30, and decided to run to Target. By the time I got home around 2pm I was starving!

DUH.

So I baked up a plate of gluten free Perdue Chicken Tenders, parsnip fries, and green beans.

I swear, I could eat these tenders everyday. Their nutritional content isn’t terrible…but it isn’t great either.

Still, they’re nice to have in a pinch – just like the one I was in yesterday!

A Big Decision

I’m getting my hair cut today!!

I am so excited. It has been nearly a year since my last hair cut, and like always – I can’t decide what I want to do!

Don’t get me wrong. I love my long hair when it looks like this:

But that takes almost an hour and a half to accomplish from wet to dry. And most mornings I start with this:

^ that is what I tame everyday. And this picture doesn’t even fully capture the rat’s nest in the back! My hair is STRAIGHT THICK. I actually can’t even wear a ponytail all day because the weight can give me a headache.

The last time I had my hair cut I played it safe.

But today I really want to spice it up! However, every time I cut my hair SUPER SHORT I always regret it right away. AND I vow to never cut short again.

So instead of going short, I’m thinking about playing around more with texture.

A Healthier Buffalo Wing

Chicken wings?

Yep. There we go. Chicken wings are what I most look forward to too! And this year I am even more excited because it gives me an excuse to make these babies..

Unlike those fried wings that threaten our bodies with gluten and saturated fat, these wings are baked and completely gluten free!

And these wings are topped with a cool crumble of queso fresco and chopped scallions! You won’t even miss the ranch or bleu cheese!

Gluten Free Wings with Queso Fresco and Scallions

You’ll need:

12-15 chicken wings

Moore’s Buffalo Sauce

Queso Fresco

Scallion, diced

Set your oven to Broil – high.

Lay out your wings in a single layer on a baking sheet that has a raised edge. You want a raised edge because the grease from the wings is going to drip off and you don’t want a giant mess in your oven!

Bake the wings on broil – checking OFTEN – until the wings crisp and brown. Once they crisp on one side, flip the wings, and allow the other side to crisp and brown.

Toss in Moore’s Buffalo Sauce and top with crumbled queso fresco and diced scallions.

EASY!

Serve these at a party and everyone will think you slaved away over a fryer. They will be the none the wiser that these wings are actually baked to crisp perfection!

Gluten Free Caramelized Onion and Bacon Tart

If you follow me on Facebook or Instagram, then you may have an idea about what I had laying around the fridge the past few days…

last night’s Caramelized Onion and Bacon Cheesy Tart

Yep. I had an excess of bacon and tomatoes. Which, if you ask me, isn’t so much a problem as it is a wonderful challenge!

The spaghetti dish was a twist on this simple carbonara. I basically just added wilted spinach and caramelized tomatoes.

And the tart.

Oh boy.

It all started with Pinterest. Of course! But then I tweaked the recipe to be not only gluten free, but also a bit more friendly to the belly.

The results were simply amazing. And honestly – way easier than it looks!

Gluten Free Caramelized Onion & Bacon Tart

adapted from The Wannabe Country Girl - original found here

Makes TWO tarts

You’ll need:

two gluten free pie crusts (I used Wholly Wholesome)

THE FILLING:

2 cups low-fat ricotta cheese

2 egg yolks

1 tsp. italian seasoning (a mixture of thyme, oregano, and rosemary)

1 tsp. salt; 1 tsp. pepper

1/2 cup shredded parmesan cheese; plus a few shreds of parmesan for topping

TOPPING:

2 small onions – diced

6 slices of bacon (baked and crumbled)

10-12 grape tomatoes – sliced in half

Preheat oven to 350.

Mix the filling ingredients, ricotta cheese through shredded parmesan. Stir well with a spoon until fully combined. Spread the cheesy mixture evenly between the two pie shells, using a spatula to smooth the filling evenly.

For the topping you’ll need caramelized onion first. This can be prepped even the day before. Slowly cook diced onion on medium to medium-low, cooking and stirring occasionally until the onion browns and becomes translucent.

Spread the caramelized onion evenly between the two pies, on top of the cheesy mixture.

Next you need crumbled bacon. I baked my bacon to help with fat. Again, this is something that you could prepare the day before or use the already cooked bacon.

Sprinkle the crispy, crumbled bacon evenly between the two pies.

Finally, stud the top of the pies with tomato halves and finish it off with a few parmesan shreds/slivers.

Bake the two pies at 350 degrees for 30 minutes. Check on the pies at 20 minutes just to be sure your crust isn’t burning.

Parrish and I enjoyed our tart slices with a mixed green salad…AT our dining room table without the TV on!

Rich, fudgy chocolate brownies, iced with a thick layer of raspberry buttercream, and then glazed with a sumptuous layer of bittersweet chocolate!

The Gluten Free Peanut Butter Fudge Brownie

The base is a rich, fudgy double chocolate brownie. layered with a creamy peanut butter ganache, and topped off with a heavenly chocolate glaze.

The Gluten Free Peanut Butter Chocolate Chunk Cookie:

These cookies are rich and buttery without a hint of anything “gluten free”. I loved the edge of bittersweet chocolate to keep the sweetness in balance with the chocolate chunks.

And last but not least, my personal favorite: Gluten Free Vanilla Sea Salt Caramel Brownie

A layer of rich, fudgy brownie layered with a gooey vanilla caramel, then topped with a deep chocolate ganache. To finish it off, a light dusting of coarse vanilla-scented sea salt. INSANE

And it’s so incredibly decadent, I only needed one bite! Which is lucky too, because I’m trying to make this baby last for a few days at least!
