Gluten Free Spicy Pulled Chicken

I did something pretty crazy Tuesday morning.

I pulled out my crockpot and threw in ingredients without following a recipe. In fact, I only used two ingredients, which I thought couldn’t possibly fail.

I was right! Smile

4 boneless, skinless chicken breasts + one bottle of Moore’s Buffalo Sauce + 8 hours in the crockpot on low = DELICIOUS Spicy Pulled Chicken

Super easy to make obviously. Literally just two ingredients! Don’t like spicy foods? Use 12 to 16 ounces of your favorite sweet and smoky BBQ sauce. Just check to make sure your chosen sauce is gluten free.

What I love most about a recipe like this, is that it gives you the ingredients to make lots of different meals.

Wednesday’s lunch was the above Spicy Chicken Sandwich on an Udi’s gluten free Whole Grain Hamburger Bun.

Then last night I made:

Buffalo Chicken Nachos! Because seriously…what is not good in Nacho form?

Baked Tostitos Scoops topped with Spicy Pulled Chicken, Cabot 50% Light Cheddar, Caramelized Onion, and Slivers of Avocado


Other ideas:

Buffalo Chicken Pizza

Stuff Celery with Spicy Pulled Chicken

Top a Salad

Mix with Neufchatel Cream Cheese and use it as a dip or spread
