A Big Ol’ Plate of Nachos

Well, I didn’t get around to making fried green tomatoes.

I always overestimate how much free time I’ll have when I’m working on the weekend. Or maybe I just underestimate how tired I’ll be when I get home!

Either way, no fried green tomatoes. But I did make a KILLER plate of nachos!

The nice part about the above nachos, is that they were CRAZY easy to make!

On Wednesday, I made a big batch of roasted zucchini and red pepper. I used it through the end of the week for Roasted Veggie Pizza, a salad, and then NACHOS!

I added in Cabot cheese and caramelized onion, and then popped it in the oven on broil. Once the cheese was melted and bubbly, I added dollops of 0% Fat Greek Yogurt. YUM!

I’m off to bootcamp!
