When I got home from Zumba last night I was STARVING!
I’ve had a super active week: Monday Bootcamp, Tuesday Zumba, Wednesday Core and Shoulders, and then Thursday Zumba. So much fun – but leaving me more than a little bit hungry!
I typically have a recovery smoothie after Zumba. I don’t get home until 8:30, and I don’t love going to bed on a super full stomach. But not last night. Last night I was on over drive and ended up making something DELICIOUS!
I started with 1/2 cup of Schar Gluten Free Multigrain Pasta:
I saw this at my Harris Teeter last week and decided to give it a try. I love that you can see the buckwheat in the penne!
While the noodles cooked, I grilled broccolini, diced some grilled chicken I had prepared the night before, and shredded a little bit of Cabot 50% Light Cheddar.
Max was very interested in this part.
I chopped the broccolini into small bite size bits, and diced the chicken as well.
Once the pasta was ready, I drained the noodles and added in the chicken, cheese, and broccolini.
I also added in two tablespoons of 0% fat Greek Yogurt that I had mixed with salt, pepper, and garlic powder.
So good! Creamy, yummy goodness with only a small amount of carbs. Tons of protein from the yogurt and chicken. Fiber and fullness from the broccolini.
Don’t you love it when random ideas come together!
I’m off to bootcamp first thing, and then just TWO days until VACATION WEEK! WOO HOO!
