Meatless meals have been popping up more and more around the GHM house.
I don’t think it started intentionally, meaning I wasn’t trying to avoid meat. Instead, I was trying to add in more fruits and veggies to my everyday meals.
This past week I knew Parrish wanted tacos. I had a small amount of shrimp in the freezer. Enough for one, not two. And then I remembered these tacos I had at Dos Perros in Durham forever ago with my auntie.
Kale and Sweet Potato Tacos!
Corn Tortillas with roasted chunks of sweet potato, garlic sautéed kale, cabot cheese, and a dollop of 0% fat Greek yogurt.
This supper was an absolute success! Lots of flavor and great textures.
Not a success:
Trader Joe’s frozen kale.
Our fridge is really low this week because we haven’t had a chance to make it to the grocery store. So I didn’t have fresh kale to work with. But then I remembered my frozen kale I had picked up from Trader Joe’s months ago. Perfect!
Or so I thought! Over HALF THE BAG was stalks. Seriously. Huge stalky stalks. Not TJ’s, not cool.
