From Pin to Plate: Twice Baked Potatoes

Oh Potatoes.

Potatoes and I have a love – hate relationship.

I love them but they hate my pancreas!

When I first received my Celiac diagnosis, potatoes were my go-to food. I knew they were gluten free, plus they were easy to prepare. But all that starch turned in to way too much sugar, and I started to see the side effects around my waist.

These days, I aim to only eat potatoes once a week. (if that) So I always want them to be delicious – if I can only eat them once a week it better be worth it!

I even microwaved my potatoes instead of baking them for the first step, bringing my prep time down from 2 hours to 30 minutes.

I will definitely be making these again!
