I was wrong. Daylight Savings ending isn’t great. Daylight Savings beginning is the best!

Not having a norovirus.
Eesh. Friends. That was rough!
I mean…it was basically food poisoning right? Except I contracted it from my handsome husband…not a plate of food.
The crazy thing is that I went from feeling perfectly fine to down right miserable within 30 minutes. Then I thought I might die for about 14 hours; then I started to feel better. Tired but better. I laid low for a few days; I had zero appetite and zero energy.
But Saturday I started to feel a little bit hungry. And don’t you know, I started to feel hungry while perusing Pinterest.

Oven Baked – Gluten Free – SUPER CRISPY – Onion Rings

I followed Kevin’s recipe from Closet Cooking found here, except I substituted Trader Joe’s Gluten Free All-Purpose flour and Glutino Gluten Free bread crumbs.
They turned out perfectly!
I baked the onion rings on a baking sheet hybrid and gave them a quick spritz of cooking spray to help them brown.
Parrish and I were both surprised by how well the “batter” stuck to the onion rings. It really didn’t fall off at all, meaning, they weren’t nearly as fragile as most baked onion rings.
I will definitely be making these again!
