Gluten Free Bibimbap

I am OBSESSED with eggs.

It’s really weird. I mean I’ve always loved deviled eggs, but I wasn’t big on any other type. Even scrambled left me feeling queasy.

But lately I have developed a love for eggs. It’s a complete 180 from where I was before. It started with toast in the mornings topped with cheesy eggs and avocado. And then last week at my brother-in-laws house I experienced…a miracle.

An over-easy egg.

Why have I never tried one before?! Goodness gracious they are positively delicious. And served best on top of a BIG BOWL of bibimbap.

I had absolutely no idea what bibimbap was until my amazing brother-in-law introduced me to it last week. A traditional Korean dish, bibimbap is a bowl of crisped rice topped with flavorful veggies, bulgogi (marinated beef), and an over-easy egg.

It is honestly one of the most satisfying dishes I have eaten…ever. So good that I had to recreate it not even week later after eating it at my BIL’s house. I couldn’t resist.

The crispy rice is amazing. I love the texture of fluffy rice with a crisp layer on top . Add to that caramelized mushrooms, sesame oil zucchini and carrots, and garlicky baby bok choy. Heaven.

The beef is marinated in tamari, scallion, garlic, brown sugar, ginger, and grated pear. It is CRAZY good!

I could eat it every night my friends. Every night and be totally content. Not so sure Parrish would agree….but I don’t care. So good.

It’s necessarily hard to prepare, meaning that each step is easy. But it is a lot of components. I think it’s worth it. Totally worth it.
