Caramelized Sugar Grapefruit

I’m still trying to figure out my morning schedule with my new job.
I typically like to be at work between 7:30 and 8:30, and my ideal day would start with me at the gym. That gets me at the gym at 6:00 or 6:30 to get in a good workout and a shower…which has me getting up at 5:30am….umm…
So I’m trying some different solutions to help with the above “situation”. Yes. Waking up at 5:30 in the morning is definitely a “situation”. One solution is cutting my breakfast time. So quick smoothies are in the mix, but today I tried a new to me concept:
Grapefruit with a caramelized sugar crust.
I’m not a huge grapefruit fan. I like tart, but I find the juice to be a bit bitter. However, sprinkle sugar on top and broil on high until the sugar hardens and BINGO. I’m in!

The sugar made a nice crunchy crust and helped cut the bitterness from the juice.
And bonus points my friends – grapefruit is naturally gluten free! Don’t you just love it when you don’t have to read some giant label and try to discern whether or not there is hidden gluten!
Next time I make these, I’m going to add a dollop of cool vanilla greek yogurt on top. I love cook yogurt on warm fruit. Decadent.
