Months ago I bought a package of Bob’s Red Mill gluten free Almond Meal. It as a total impulse buy, in that I had no idea how I was going to use it. But there was something about that fluffy almond meal that I couldn’t resist!
I couldn’t help myself.
Good thing too.
Gluten Free Almond Flour Waffles
one cup blanched gluten free almond meal (I used Bob’s Red Mill)
1/2 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. salt
2 tbsp. maple syrup
1 tsp. vanilla
Whisk together the dry ingredients. Then add in the wet. Whisk until well combined. Cook in a greased waffle maker.
Makes 4 waffles.
Top with your choice of delicious toppings. This morning I went basic: butter and syrup.
These waffles were super fluffy – I was impressed!
