Gluten Free Appetizer: Mini BLT Bites

Yard Sale folks are crazy.

No offense to any of you who are yard sale goers….however, I’m pretty sure if you are then you already know you’re crazy!

Saturday morning Parrish, my mother-in-law, father-in-law, and I were up even before the sun. Actually well before the sun. And folks were coming to the yard sale way before we had advertised it was open.

Between frequent downpours and hagglers, it ended up to be a great day. And pretty successful too. One of many sales we’ll have to do to settle the estate, but it feels good to have one under our belt. I’ve never gone back and forth with someone so much over 50 cents, but I guess that goes with the territory.

And can I just tell you guys how amazing my MIL and FIL are? I mean, I know I go on and on about them already, but seriously. Parrish and I are very lucky to have them.

We’re also lucky to have amazing friends who after a day like Saturday, invite us over to indulge on home cooked surf and turf!

My friend Mack is one of those lucky people who just an amazing chef. He’s super intuitive and he just knows how to combine flavors.

For the BLT bites, he used a base of Glutino gluten free bagel chips, then a dollop of lemon basil aioli, spring mix, crisp bacon, and a fresh heirloom tomato wedge. Sit a platter of these little babies in front of me and I am one happy lady!

and I’m even happier! This is baby Josey, Mack and Amy’s daughter. Isn’t she the cutest?!?! She makes my ovaries hurt just looking at her!
