Ah. Another Monday and another weekend gone.
Poot. I hate to be pessimistic at the beginning of a week, but I just had such a GREAT weekend!! I wasn’t ready to start a new week this morning. I try not to “live for the weekend”, but some weekends are so great you just don’t want them to end.
Saturday night Parrish and I went to our brother Morgan’s house for a DELICIOUS supper. I’ve written about them before, but Parrish’s brothers Morgan and Chuck are just the best chefs! Everything they make is incredibly simple but delicious.

Watermelon with Basil and Feta
And even more food that I didn’t get a chance to take a picture of! It was so nice to sit outside (seriously GORGEOUS weather here on Saturday) and spend time laughing and telling stories with family.
Speaking of LOVE, you guys are going to love that Watermelon!
So simple. So delicious.
One small seedless watermelon
1 to 2 cups feta cheese of your choice
1/2 cup fresh basil minced
1/2 cup fresh mint minced
optional: balsamic glaze
Slice your watermelon into chunks and add in the feta, basil, and mint. Stir to combine. Just before serving, add a pinch of salt and stir once more. Optional: This would be even yummier with a drizzle of balsamic glaze. (You guys know how much I like my drizzles!)
So looking at that watermelon and reminiscing on that food has lifted my spirits already!
