Last night I made something for supper that I should have made WEEKS ago!
Seriously. Chipotle is good but I’m going to be honest with you guys.

Local chicken marinated in Mojo Criolo for 10 hours – grilled to perfection
Quartered grape tomatoes
Two avocados smashed and blended with my immersion blender – then mixed with 1/4 cup diced red onion, the juice of three limes, and one tbsp. chopped cilantro. Finished off with a pinch of salt.
Wild brown rice cooked – then mixed with 1/2 cup chopped cilantro and the juice of two limes
0% fat Chobani Greek yogurt
Finished off with one tbsp. of Mexican Blend Cheese
The flavors meld so well together!
I was almost to the end of bowl when I remembered – THE BEANS!
I was totally going to add black beans, but completely forgot them. Whoops. I’ll add them in to my leftovers for lunch today.
