Finding balance…and gluten free food

A big part of my life is balance.

In my early twenties I would go ALL IN or nothing. If I wanted to get fit, then I had to exercise everyday or nothing. If I wanted to eat healthy, then I had to count all my calories and always end up at 1,000 by the end of the day or not and hit the Golden Corral buffet.

If I was going through a stressful time, then I would wallow in the stress and think of nothing else. If I partied, then I was the last one to be drug out of the party.

Funnily enough, I found balance in a lot of ways through Celiac Disease.

You see, with Celiac Disease, when I went gluten free – I went ALL IN. There was no turning back; I finally started to feel healthy again. But I had to learn balance with my diet.

And I suppose through marriage, I continued to learn balance. Just because I’m feeling stressed or put out, doesn’t mean that I get to check out from duties in our relationship. I had to learn how to manage the tough, while attempting to take care of myself and those around me. I had to learn to go easy on myself.

This past month has been really hard on my family. Parrish and I have been wading through, and we’re pretty lucky to have an amazing support system in Wilmington.

This past Friday I spent the morning at UNCW getting some kinks worked out for school, while Parrish spent the morning in the hospital with his Dad. Our quick weekend trip was certainly NOT a vacation.

I had some time in between meetings, and lucky for me MOH and Amy-Lou offered to pick me up for lunch. Stolen hours with friends are DEFINITELY good for life balance.

Surfhouse in Wilmington, NC is AMAZING. Featuring yummy sandwich combinations and tasty tacos in a relaxed atmosphere, I was instantly in love. Organic ingredients and fresh local produce…need I say more? Oh yeah, AND gluten free bread y’all!

UNSWEET TEA. Yes, I am addicted. I am also addicted to Surfhouse. Yep. I went there for lunch two days in a row AND ordered the exact same thing, except instead of chips I ordered a side of fruit.

This sandwich was INSANE! The steak was tender and flavorful, with NOT ONE bad bite!
