Supper with at the Collini’s

What. A. Weekend!

Saturday night Parrish and I had big plans at Chef Collini’s house, and I couldn’t have been more excited! My brother-in-law, while not a chef by career, is AMAZING in the kitchen! I would choose a meal at his house over a meal in a restaurant any day of the week.

As soon as we arrived, we were greeted with a tasty appetizer:

baby zucchini marinated in Orange Muscat Champagne Vinegar (super fancy…from Trader Joe’s)

In addition to the platter above, Chuck also served a very simple platter of blood oranges dusted with salt:

Bright and Juicy!

There kitchen is so cozy (and gorgeous). It is so much fun to sit at the table with their hilarious young’uns floating in and out of the conversation with a plate of yummy apps and a glass of GOOD wine. And it never stops there.

The entire time you’re enjoying yourself, savoring the simple but perfect flavors, Chuck is effortlessly standing over his stove putting together supper.

And this supper was a new dish for me:

Turns out…I love paella!

Rich, complex layers of flavor with tasty bites of chicken and mushroom. Love! Love! Love!

Even better? My BIL and SIL are SUPER careful about gluten. I never worry when I eat at their house. It helps that their youngest has some food allergies, so they are more aware than some of hidden allergens and such.

But we all know that I’m blessed with an incredibly thoughtful family, and for that I am thankful!
