Gluten Free French Onion Dip

Can you believe that it’s almost 2012?!

I know most blogs are already talking about their resolutions and getting a jump start on a healthy new year.

And…I don’t want to say that I’m going in the opposite direction. What I’m about to propose to you isn’t…entirely unhealthy.

But it ain’t healthy.

However, if you make this recipe for New Years Eve, whether you’re at a party or at home, just be sure to share! That way, you’ll have an appropriate serving = healthy!

Because friends, this dip is so dang good! And your friends and family will slap eat it up! And they’ll think that you’re a genius. Win Win.

I[french onion dip main header[6].jpg] love French Onion Dip. I usually just go for Dean’s French Onion Dip, but since I was off work yesterday I thought I would try to make my own. I’m so glad I did! It is so much creamier than store bought premade. The onion is rich with the perfect amount of salt. It was a big hit at the potluck and so simple to make.

You’ll need:

1 tbsp. extra-virgin olive oil

4 cups chopped yellow onion

3/4 tsp. salt

1 3/4 cups mushroom broth

2 tsp. onion powder

2 tbsp. white vinegar

1 cup reduced-fat sour cream

1/3 cup nonfat plain yogurt (I used Fage so it would be creamier)

Start by heating your oil and chopping your onion. I ended up using 2 large onions to get to 4 cups. Add the onions to the hot oil and the salt, cook on medium-high heat and stir occasionally until it begins to brown. (10 minutes) Add the broth and scrape up any of the brown bits from the bottom of the pan. Let the liquid simmer until it is almost evaporated, 15 to 20 minutes. Reduce the heat to medium-low and cook until the onions are deep golden brown, 7 minutes. Stir in onion powder, then stir in vinegar and cook until evaporated, 5 minutes max. Remove from the heat and let cool for 20 minutes.

Combine the sour cream and yogurt in a medium bowl. Add in the onion mixture. Cool dip in the fridge for at least 30 minutes, so the flavors can meld.

Make sure you read the ingredients listing on your mushroom broth carefully; broths can often have gluten.

Everyone loved the dip! It serves great with chips and veggies. It would also be AWESOME on a steak sandwich.

Christmas Eve–Gluten Free

Thanks so much to everyone for the well wishes! I never fell over the ledge and got fully sick, but poor Parrish is on day FOUR of a SUPER sore throat! He had a strep test come back negative, but he’s taking antibiotics just to be safe.

There are so many reasons that Christmas Eve is special in my family, but one of the biggies for me this year, was getting to see twinsies!

We had snackies per usual, and I made the Cranberry Walnut cheese log and Potato Skin Sliders for everyone. Also in the spread: cocktail weenies, meatballs, and a bangin’ taco dip!

AND same as last year, twinsies brought a little…something…to spice up the punch!

Christmas in Quarantine.

Parrish has either a severe head cold or strep, and has been sick since Christmas Eve. I am teetering on the edge, and drinking Umcka like it’s my life force. The worst part? NO Collini Christmas Supper; which I have been looking forward to for weeks.

So…I’ll be back tomorrow with a recap of Christmas Eve. Until then, comfy blankets, pulled shades, and endless HBO movies.

Gluten Free Cake Batter Fudge

Another Pinterest Inspired Recipe! tweaked from Not Just a Housewife

**IMPORTANT: This recipe takes an INSANELY long time to set! Mine has been setting for 24 hours, and it’s still a little droopy! I recommend making 2 days ahead of time.

You’ll need:

  • 1 can (14 oz) of sweetened condensed milk (Nestle is gluten free)
  • 2 packages of white chocolate chips
  • 1 1/2 cups Betty Crocker gluten free yellow cake mix (dry)
  • 1/2 cup heavy whipping cream ( I used Organic Valley)
  • 2 cups Fluff marshmallow crème

In a heavy bottomed saucepan, over low heat, combine the milk, chips, and cake mix. Stirring frequently until the chips are melted. Then add in the heavy whipping crème, stir to combine. Then add in the Fluff, stir to combine. Then STIR, STIR, STIR until all ingredients are melded.

Pour into a large GREASED brownie pan, and then sprinkle with sprinkles! Pop into the fridge covered with plastic wrap to set.

Don’t want to wait for it to set? No worries: Serve it on a spoon! Winking smile

Happy Hump Day!

I was so happy when I woke up this morning and my migraine was gone! I had a headache for most of the afternoon yesterday, but pushed through because I had a lot to do. My book club holiday meeting was last night, and so I went to the gym before, thinking those endorphins would knock it out.

Gym + Headache = Migraine

Who knew! Thankfully I was able to drive myself home, but it was terrible. I HATE driving with a headache.

Once home, I decided to eat, hoping that would help. On the menu, a new find at my local Harris Teeter:

Bella Monica’s delicious gluten pizza now in a smaller size! For reference:

teeny. But at 380 calories, paired with a salad it’s the perfect meal! PLUS the smaller size means a lesser price, $6.99 each.

YUM! This little pizza is SO GOOD! The crust is insane! Doughy, buttery, crispy.

And while it didn’t make my migraine go away, I still enjoyed it immensely.

Even better: this pizza is locally made in Raleigh, NC! ALSO they have a restaurant! I can’t believe I haven’t gone yet?!

You’ve Got Mail and a GIVEAWAY!!

There’s nothing like fun mail to make you feel like a kid again! True Story: Every time I get a birthday card in the mail, I always expect there to be money inside. Silly, no? I’m never disappointed when there isn’t (hello…I’m a grown up) but there’s always a tiny part of me that genuinely thinks there will be a five dollar bill in the card!

Yesterday’s fun mail started when I got to work yesterday and found this special surprise on my desk:

Gorgeous!! A very sweet gift from the BEST mother-in-law and father-in-law ever! Yes, be jealous, they are the bomb!

And when I got home from work late last night, I had three packages a-waiting. First a HILARIOUS one!

We are the 99% grape jelly from Parrish and I’s HILARIOUS Aunt Martha and Uncle Ken. I was laughing so hard when I opened the box. Only they could be so clever!

Second, a package I had been anticipating:

DELICIOUS Equal Exchange coffee.

The DR of Congo is seriously one of the saddest and most dangerous countries in the world right now. It’s especially deadly and violent for women, and this new coffee project is hoping to help. Fair Trade coffee in general makes a difference, but this bag is particularly wonderful!

The Congo Coffee Project was created by Equal Exchange in partnership with the Panzi Hospital in the D.R. Congo, which offers programs for more than 2,000 survivors of sexual violence each year. The hospital provides life-saving treatment, counseling, and aftercare programs for women and others in need of healing.
For every bag of coffee sold, Equal Exchange will donate $2 to the Panzi Foundation.

BONUS: It’s delicious!! A great cup of coffee, with an even better cause! This would make an excellent Christmas gift!

Pillsbury Who? Gluten Free Crescent Rolls

Let me tell you what really just…irks me.

Yep. That stinkin’ cute, always smiling, never aging, Pillsbury Dough Boy. I know you’re thinking “How in the world could a cute little dough boy piss you off?” But here’s the thing.

He does.

This time of year, he’s everywhere! Commercials, store displays, buffets at parties. He wraps up little smokies, bakes tons of Christmas cookies, and the pies…oh the pies. There are a ton of pies.

But it’s the crescent rolls that make me the most angry. So fluffy and easy to make…

and FULL of gluten.

It’s actually the gluten that makes them light as air and fluffy. That same gluten that my body thinks is poison, is what makes those little rolls so yummy!

Stupid gluten.

And yes, it’s pretty out of character for me to let some food I can’t have bother me, but there is NO gluten free substitute for crescent rolls out on the market! Not a one. So when I see a platter of pigs in a blanket, it makes me a little sad…and then a little bit angry.

But let’s be honest. Pigs in a blanket are not that good…right? No. They’re nostalgic. They’re cozy. But they’re not a culinary sensation.

Still. This year. This year will be my year to make a gluten free pig in a blanket. And they will be awesome!!

I’m going to use this recipe I’ve used before, and cross my fingers.

Quick Gluten Free Lunch: Fresh Zucchini Marinara

Ever since I had the Garden Lites Zucchini Marinara for lunch last week, I could not get the flavors out of my mind! And even though I don’t have a veggie spiraler, I decided it didn’t matter. Zucchini is zucchini, no matter what shape it’s in!

This is a quick lunch, and it’s absolutely delicious!

While I’m waiting for my oatmeal to cook in the morning, I slice the ends off of a zucchini, and then slice it in half. Those halves, get cut in to crescents.

In a bowl go the crescents, and then they are tossed with olive oil and steak seasoning to coat.

Spread in a single layer onto a baking sheet, and then bake at 400 degrees for about 20 minutes, or until the zooks are soft and beginning to brown.

Then in a bowl, or your lunch container, add in marinara sauce and your cooked zucchini. I love this marinara the most:

Classico Traditional Sweet Basil has great flavor!! PLUS it was BOGO this past week at Harris Teeter!

Voila!

Eat immediately or pack for lunch. Reheat before eating if you pack it, still so good!! LOVE it! You’ve made your lunch while you ate your breakfast! Fast and Easy.
