Wholesome Chow–Gluten Free Pancakes

 

This morning I woke up bright and early at 6:15 in a great mood! Why is it that I can never sleep in on my days off, but when I have to get up early to make it to the gym before work I feel like I could sleep for hours?!

I have a busy day planned for today, which includes assignments in each of my classes…

But with the extra time this morning, I decided to get fancy for breakfast and make pancakes!

Wholesome Chow contacted me right after I got back from California, and asked if I would like to review two of their gluten free mixes. I can’t believe I’m just getting around to it!

Product Review- Wholesome Chow Gluten Free All Purpose & Pancake Mix

I decided for my first batch, I would follow the instructions perfectly:

instead of adding chia, oats, or protein powder. (this was a mistake)

The mix was easy to make, and I was excited it didn’t call for eggs, because we’re out!

In to the skillet they went, until bubbly…

I made myself a stack of 4 pancakes, topped with two strawberries from my own yard!

One tablespoon of Grade B maple syrup on the side for occasional dips!

These pancakes had what every perfect stack should have – crisp edges and a doughy center. YUM!

The flavor was great. I didn’t taste the Apple Cider Vinegar, and since I added 1 tsp. of vanilla to the batter, there was a slight hint of funnel cake!

The texture was good. Doughy and chewy.

But here’s my one complaint.

I ate these pancakes at 8:15, and now three hours later, I am STARVING!!!!

AND I haven’t even been to the gym yet! Granted I’ve been knocking out school work, and using the ol’ noggin, but dang! I should have beefed up the batter with chia and oats and protein.

OR I should have topped these babies with yogurt. There just wasn’t enough protein to hold me over. I like my breakfast to leave me a little bit hungry by 11:30, so I have my snack, and then hold me over until lunch at 1pm. Being this hungry at 11:15 makes me want to eat a giant pile of french fries! (Which thankfully we don’t have at our house!)

But overall, I would definitely recommend this mix. They were very yummy gluten free pancakes, and if you can’t do corn then you’re in luck! They’re corn free too! And if you can’t do dairy, then you can use a milk substitute. Yay!

Alright, back to school work. I’m working on a discussion question: If I were an Indian in North America between 15,000 years ago and AD 1500, would I have rather been a hunter-gatherer or a farmer?

Tough question. But I definitely would have been gluten free! Winking smile

Gluten Hates Us–A food truck & the winner!

 

I’m seriously thinking about starting a mobile food truck. It’s HUGE here in Durham, but the one thing missing from the fleet is definitely a gluten free option. At first I would just serve sandwiches. Yum-Yummy Udi’s gluten free sandwiches. On the menu:

Gluten Free Chickpea Nachos

 

So I’m guessing you guys have already made your menu for the week haven’t you? Well darn it, that’s a shame, because these nachos are da’ bomb. Yep. Da’ Bomb. You know what I’m saying!

Chickpea Nachos

I started by smothering one can of organic chickpeas with one pouch of Frontera Skillet Sauce:

in a small baking dish and then baked at 400 degrees for 30 minutes or until the chickpeas are tender.

Then I scooped them up and scattered them on top of gluten free corn chips with white onion, cheese, and sliced tomato.

So good!!!!

The next time I make tacos, I am definitely using chickpeas. This can was 88 cents at Whole Foods. That is SO MUCH cheaper than my organic, free range ground chicken!

Gluten Free (Un)Fried Chicken

 

I wish I could tell you all that I’m totally handling the stress of being a part-time college student, assistant director of a non-profit, a wife, and a fur mommy…but only one day in and I already feel like I’m coming apart at the seams.

Outside of the holidays, this is the busiest week at work. My school books aren’t here yet, and the reading assignments are stressing me out. I feel disorganized and out of control – neither of which do I like. I am physically exhausted from moving in over 300 rugs. I’m nervous about having a successful rug event…our families in Pakistan need us to be at our best and do well.

Hand me a straw – I need to suck it up!

I’m practicing deep breathing this morning, and writing everything out to try to make sense of all the deadlines. I’m giving myself a day off from the gym, and am cleaning my bathroom instead.

In the past, all this stress would have sent me barreling down a pint of ice cream, or wolfing down a bowl of gluten free pasta. But thankfully, my meal plan wouldn’t allow it! That’s another reason I love a meal plan, there’s no room for de-railing!

And you know what? Good thing I stuck to the meal plan, because last night’s supper was a healthy twist on a comfort food:

Gluten Free (Un)Fried Chicken

This chicken is YUMMY and EASY!

First, I cleaned my Smart Chicken Breast, and then sliced it in to tenders. Then I marinated it in Goya Mojo Criollo marinade for an hour.

Next I poured two cups of Kinnikinnick Gluten Free Panko Breadcrumbs on to a plate, and sprayed my baking sheet hybrid (a baking sheet with a cookie cooling rack on top) with cooking spray. Preheat oven to 375.

My chicken went straight from the marinade in to the breadcrumbs, where I pressed the chicken to get good coverage. Once covered, on to the baking sheet they went. After all the tenders were covered, I sprayed the tops and bottoms with additional cooking spray.

Bake for 20 minutes or until the chicken has cooked through.

Serve with BROCCOLI…or whatever veggie side you love. Parrish saut├ęs' broccoli with garlic and tomato and it is SO GOOD!

I’m so glad I have a piece to have for lunch today! It’s going to make a bangin’ salad topper!

Up and At’em

 

Classes started! I woke up at 5:30 this morning with that excited feeling in my stomach…hopefully that excitement will last for the whole semester!

While I am worried about working my full-time…sometimes 50-60 hours a week job and taking classes, I am more excited about working towards my degree again! But I am also determined not to compromise my workout schedule, so that means an even earlier morning. Hazel is pretty excited about that!

Good thing my current favorite breakfast is YUMMY and FAST!

Pear and Gouda GF Grilled Cheese

 

Every Sunday morning, I sit down with a GIANT cup of coffee and make our menu for the upcoming week. Checking my coupons, current sales, and our home inventory, I try to stay in our budget ($80 a week) but also change it up.

This week at Harris Teeter, Bartlett Pears were in the Save Big category, and so I  planned a pear sandwich. I hadn’t ever tried this combo before, but with cheese and bacon…how bad could it be?

The ingredients:

Udi’s Whole Grain GF bread, bartlett pears sliced thin, white onion sliced thin, smoked gouda cheese, bacon, and jalapeno jelly from my auntie:

but you could use any mild red pepper jelly…or beg my auntie to send you a jar. This stuff is the jam!

Make your sandwich!

6. Bacon! (I use Boar’s Head – gluten free)

and you’re ready to press!

I don’t have a panini press, so I just use my George Foreman that I have literally had for…TEN YEARS!! My parents bought it for me my freshman year of college, and I made MANY a late night grilled cheese on that baby!

I hope ya’ll had a great weekend! It was worky work around the GHM house, but I actually ended up getting a ton done! Saturday was all fair trade, all day. Yesterday was a bunch of catch up. With my classes starting on Wednesday, I wanted to have all my ducks in a row. But I also spent some time sprucing up the ol’ blog, and I wouldn’t say I’m finished, but it’s a good start.

Just throw it in a jar

 

Jars are one of my absolute, favorite ways to carry my lunches and snacks around. Because they’re glass they seem to keep the food fresher, and I don’t worry about tops popping off in my bag. For that reason, I seem to have collected quite a few, and while I know Parrish likes reusable containers instead of plastic bags, I’m not so sure he loves jars as much as me…or maybe he just doesn’t think we need so many. But just like my mom and bestie, I’ve never met a jar I don’t like.

On mornings when I don’t have time to sit down for breakfast, I like to pack a ‘Mess Jar’.

1/4 cup Bob’s Red Mill Gluten Free Rolled Oats, 4 strawberries sliced, and whatever yogurt I have on hand. In this case it was Stonyfield Farms French Vanilla, which after having plain Greek Yogurt for a few months, this was like a dessert!

With a side of coffee and I’m ready to go!

I also pack snacks, for work or an afternoon of shopping, it’s nice to have something in my purse that I can quickly snack on. My favorite:

assorted veggies. If I take this to work, then I also pack a side of hummus. YUM
