In honor of Celiac Disease Awareness, Annie’s sent me a super sweet surprise in the mail:
Gluten Free Bunny Stuff! (Side note: I pronounce bunny like BUR-ny. You should try it; it’s 100% adorable, 0% irritating)
I actually didn’t realize that Annie’s made so many gluten free products, and Parrish was SUPER excited about the fruit snacks. That man LOVES gummies. But I was super excited about the Creamy Deluxe GF macaroni and cheese. Umm…how long has it been since we’ve been able to enjoy Velveeta?!
And you know me, I had to doctor it up a little bit.
I started by preparing the pasta as per directions on the box and once cooked, I stirred in the cheese!

Then I added some slow cooked mushrooms and cherry tomatoes:
To make the veggies, I melted one tbsp. of butter in a fry pan and then added in the mushrooms, and sautéed over medium heat. Once the mushrooms started to brown, I added in the cherry tomatoes, which I had sliced in to quarters, and sautéed for an additional 10 minutes.
This bowl was PERFECT! PLUS it was one of those rainy, cold days and this bowl provided instant comfort with ease!
Surprisingly, it even reheated well for lunch the next day. I’ve had some GF pastas just turn in to a giant block the next day, but this was still yummy! I also added in some roasted okra and zucchini to my lunch bowl. (which was a great idea!)
Happy Wednesday! This is my 10th day working in a row, but I can see the weekend horizon! And it doesn’t hurt that this Saturday is a certain someone’s BIG birthday party. Woop Woop!
