I wish I could tell you all that I’m totally handling the stress of being a part-time college student, assistant director of a non-profit, a wife, and a fur mommy…but only one day in and I already feel like I’m coming apart at the seams.
Outside of the holidays, this is the busiest week at work. My school books aren’t here yet, and the reading assignments are stressing me out. I feel disorganized and out of control – neither of which do I like. I am physically exhausted from moving in over 300 rugs. I’m nervous about having a successful rug event…our families in Pakistan need us to be at our best and do well.
Hand me a straw – I need to suck it up!
I’m practicing deep breathing this morning, and writing everything out to try to make sense of all the deadlines. I’m giving myself a day off from the gym, and am cleaning my bathroom instead.
In the past, all this stress would have sent me barreling down a pint of ice cream, or wolfing down a bowl of gluten free pasta. But thankfully, my meal plan wouldn’t allow it! That’s another reason I love a meal plan, there’s no room for de-railing!
And you know what? Good thing I stuck to the meal plan, because last night’s supper was a healthy twist on a comfort food:
Gluten Free (Un)Fried Chicken
This chicken is YUMMY and EASY!
First, I cleaned my Smart Chicken Breast, and then sliced it in to tenders. Then I marinated it in Goya Mojo Criollo marinade for an hour.
Next I poured two cups of Kinnikinnick Gluten Free Panko Breadcrumbs on to a plate, and sprayed my baking sheet hybrid (a baking sheet with a cookie cooling rack on top) with cooking spray. Preheat oven to 375.
My chicken went straight from the marinade in to the breadcrumbs, where I pressed the chicken to get good coverage. Once covered, on to the baking sheet they went. After all the tenders were covered, I sprayed the tops and bottoms with additional cooking spray.
Bake for 20 minutes or until the chicken has cooked through.
Serve with BROCCOLI…or whatever veggie side you love. Parrish sautés' broccoli with garlic and tomato and it is SO GOOD!
I’m so glad I have a piece to have for lunch today! It’s going to make a bangin’ salad topper!
