But last night, he really blew me away.
Crisp Polenta cakes with sauteed bok choy, mushroom, and shallot topped with mahi-mahi.
Drizzled with balsamic glaze. Mmmmmmmmmm balsamic glaze…..
It was delicious! The polenta had a crisp crust but stayed creamy on the inside. The fish paired perfectly with the bok choy, which is one of my favorite greens!

It’s my last day of work today and then….VACATION!!!!!!!! Woo Hoo!!! We’re flying out Monday for California with stops in San Diego and LA!
