He’s Handsome too

I am a lucky lady.

P 002

Not only is Parrish a kind and loving hubby, but he is also an amazing cook! I guess he gets that from his brothers….remember too much pork….and an Italian Christmas?! Yeah. It runs in the family.

But last night, he really blew me away.

P 003

Crisp Polenta cakes with sauteed bok choy, mushroom, and shallot topped with mahi-mahi.

P 005

Drizzled with balsamic glaze. Mmmmmmmmmm balsamic glaze…..

It was delicious! The polenta had a crisp crust but stayed creamy on the inside. The fish paired perfectly with the bok choy, which is one of my favorite greens!

PLUS mahi-mahi counts as my new food for June! If you’re new to the blog, then you may not know that one of my New Year’s resolutions was to try a new food a month! So far, so good: February, March, April, May

For the polenta cakes, he used Melissa’s:

They sell this at our local Harris Teeter, but I think I’ve seen it at Trader Joe’s too. Just be sure to check for the:

gluten free labeling on the package!

It’s my last day of work today and then….VACATION!!!!!!!! Woo Hoo!!! We’re flying out Monday for California with stops in San Diego and LA!

Any recommendations on what to see, where to eat, and where to shop?
