We started out at the Charlotte Airport at…oh….5:30 in the morning! Needless to say, I was barely able to shower and get dressed in time, so I chanced it and crossed my fingers for a good GF breakfast option at the airport.
After walking past many, many biscuit options, I went for a classic at Starbucks:

I’ve actually reviewed this bar before and guess what: they’re still delicious!
The flight to Chicago was pretty quick, and by the time we landed I really wasn’t all that hungry. But our next flight was going to be almost four hours, so I grabbed something to go:
A Beans Shaker; which is basically an ice cream sundae container filled with black beans, pico de gallo, corn, jicama!!!!, red onion, red pepper, and green pepper. Complete with an avocado dressing on top.
Bluriness aside, this shaker was awesome! Totally hit the spot. I enjoyed it mid plane ride.
However, some folks in the group couldn’t wait until we boarded to enjoy some of Chicago’s finest:
Even though Parrish just left Chicago a few days ago, he couldn’t wait to get another Chicago dog.
Our second flight was pretty uneventful as well. Long but smooth.
By the time we landed, we were all pretty hungry and just decided to eat somewhere close to our hotel, which made me happy because they had mango salsa!
Seriously. Mango in salsa is genius. In the mix: mango, pineapple, red onion, red pepper, and cilantro. Perfect!
Then we went and found ourselves a perfect perch at the rooftop bar of our hotel:
and enjoyed a cocktail…or four. Seriously, why doesn’t NC have happy hour!?!
Today we’re hittin’ the road and headed to Burbank until Friday. Then we’ll get to spend our last weekend on the west coast in San Diego!
Hopefully we’ll pass an In N Out Burger! And hopefully my body will hurry it up and adjust to the time change!
