Throw it Together


I didn’t have a long weekend per-say. It was long, but I was working. The only time Parrish and I were able to carve out for grocery shopping was ~8pm on Sunday. So yeah, that didn’t happen. We pushed it aside and decided it could wait until Monday.

That seemed like a good idea.

But on Monday morning when I started to pack my lunch for work, I regretted that decision. No berries, no yogurt, no meat, no salad. Even my bag of spinach was nearly empty.

Then I spotted my bag of gluten free brown rice tortillas, and remembered this guest post from Jillian.

Gluten Free Brown Rice Tortilla Pizza!

I used one Food For Life brown rice tortilla; topped with: pizza sauce, garlic salt, chopped onion, spinach, and torn pieces of low fat smoked provolone. Bake at 400 degrees until the cheese melts and begins to tan (turn golden brown).

Once out of the oven, I drizzled with balsamic glaze < best idea ever!

I enjoyed one piece as soon as it came out of the oven, but the rest I packed up and took to work. Great news: It was still yummy after re-heating!


Even better news: I’m off work today!! I think there may be a visit to H&M in my “schedule” today Winking smile
