GF Remy Chicken Salad

 

I’ve never really liked chicken salad. There was just something about the “sauce”. It always seemed…bland. But I love the concept. So I set out to re-create chicken salad, but instead of following a traditional recipe, I whipped up one of my favorite sauces:

And together with chicken, the results are…

Even better, it’s fast, easy, and can be made in advance! YAY!!!

Make it! >

2 tbsp. 0% fat Greek Yogurt

2 tbsp. mayonnaise or light mayonnaise (not feeling it? Use only yogurt!)

2 tbsp. ketchup

2 scallions, sliced

1 tbsp. sliced shallot

2 tsp. Dijon mustard

Put all of the above in a food processor and give it a whirl, scraping the sides. You want this to be blended but some chunks are fine. Transfer in to a bowl and add:

One red pepper, diced

1 tbsp. dill pickle relish

3 boneless, skinless chicken breasts (cooked and cut in to chunks)

Mix well and salt and pepper to taste; Voila!

Serve on a sandwich, with chips/crackers, or with a spoon!
