So remember how I said that Parrish was out of town this past weekend for a conference in Chicago?
WELL he’s actually been out of town all week! That’s right. He’s FINALLY coming back home today and I couldn’t be more excited. Things have been getting kinda weird around here.
The sock monster has struck more frequently since he’s been gone:
I don’t know what it is about fluffy socks that tempt Hazel so much, but she can’t keep her paws off’em.
Also weird, my entire box of Free Bird gluten free chicken patties have magically disappeared!
Or maybe I have eaten this sandwich every single night Parrish has been gone!
I know, I know. But I had kale chips on the side….and drank a ton of
Redbridge water….AND had quinoa messes for lunch!
But let’s just say that I need some variety in my life, and apparently my hubby helps me with that! I’ll have the last of my quinoa mess batch for lunch today and hopefully there will be some salads in my future!
Broccoli and tomato tossed in Balsamic Vinaigrette and oven roasted until broc browns and tomatoes ooze. Mixed in with 1/4 cup chopped chicken and cheese
garlic salt, oregano, and 1/2 cup spinach sliced in slivers.
ALL mixed with 1/2 cup quinoa cooked
This makes two batches, which warm up perfectly for lunch! I highly recommend drizzling balsamic glaze on top too.
