Oops, Udi’s did it again


Britney Spears references aside, Udi’s you are the best.

There’s a reason so many gluten free folks gush about how good Udi’s bread is. And this past weekend when I was at the new Whole Foods in North Raleigh, I was reminded just how good.

Gettin' kinda weird around here


So remember how I said that Parrish was out of town this past weekend for a conference in Chicago?

WELL he’s actually been out of town all week! That’s right. He’s FINALLY coming back home today and I couldn’t be more excited. Things have been getting kinda weird around here.

The sock monster has struck more frequently since he’s been gone:

Also weird, my entire box of Free Bird gluten free chicken patties have magically disappeared!

Or maybe I have eaten this sandwich every single night Parrish has been gone!

I know, I know. But I had kale chips on the side….and drank a ton of Redbridge water….AND had quinoa messes for lunch!

But let’s just say that I need some variety in my life, and apparently my hubby helps me with that! I’ll have the last of my quinoa mess batch for lunch today and hopefully there will be some salads in my future!


Quinoa Mess:

Broccoli and tomato tossed in Balsamic Vinaigrette and oven roasted until broc browns and tomatoes ooze. Mixed in with 1/4 cup chopped chicken and cheese

garlic salt, oregano, and 1/2 cup spinach sliced in slivers.

This makes two batches, which warm up perfectly for lunch! I highly recommend drizzling balsamic glaze on top too.

1. Pinterest

I am SERIOUSLY in love with this website. Basically, you can ‘pin’ anything you love on the world wide webs and it will save it for you….all on a little organized board!! I have boards ranging from fashion, DIY, interior design, food, and fitness. So if you’re looking for inspiration for an upcoming wedding, or want a better way to save recipes than with a bookmark, pinterest has you covered!

PLUS you can ‘follow’ other folks’ boards. For example, I follow the Young House Love crew on pinterest, so I have the advantage of getting to see things that interest them. 9 times out of 10, I love it too!

2. Un-Sweet Tea

Being a true Southern girl, I have always loved tea. Although, growing up, my only option was sweetened tea. Well, move over sugar, we’re breaking up. Well, we’re not completely finished, but I want you in my desserts – not my drinks! Un-sweet tea is DUH-licious. Add a splash of lemon juice – even better!

3. FRESH Juice!

Over the weekend, I told all my GHM facebook friends that Fresh Juice is back!

I had put the fresh juice on the snooze button since starting my new workout schedule in March. But that is over! It’s back. True – I have to get up 15 minutes earlier. True – It’s totally worth it. False – Hazel is not afraid of the juicer

4. BIC Bands

These are seriously the best head bands ever. They’re lined with some sort of velvety fabric, so they never slip! Ever.

Seriously. I work out in my sparkly teal one.

And it doesn’t budge ONE INCH. And it doesn’t give me headaches. And it’s sparkly.

Yep. I see WAY more BIC bands in my future.

5. Double Dark Chocolate Gelato


Talenti gelato is the wind beneath my wings. It is so good.

I may or may not have found a koozie that it fits in to. Is that a good thing or a bad thing?

When the cat’s away…


This is a serious sandwich.

Seriously delicious.

Parrish was in Chicago this past weekend for a conference, and so I had nothing but free time on my hands! After catching up with a friend at the pool, I decided to swing by a new Whole Foods that opened up in North Raleigh. While the WF in Durham is LITERALLY four blocks away from my work (dangerous!!!), it doesn’t have as good of a selection.

I am SO glad I made the stop! I found SO MANY goodies, including the Udi’s Whole Grain hamburger bun and Freebird gluten free chicken patties:

I was hesitant to purchase, just because I hadn’t read any reviews. As we all know, so many GF products can be too good to be true. But with Parrish out of town, I knew it would make for a simple supper, so I chanced it.

SO GLAD I purchased. These patties are ‘da bomb.

After just heating in the oven, I added a smidge of Moore’s Buffalo Wing Sauce:

And then I layered

spinach, tomato, caramelized red onion, and spiked Greek Yogurt

topped with an Udi’s whole grain hamburger bun!

YUM. Each bite was delicious. The chicken was SUPER high quality, and I love the Whole Grain Udi’s bun. Since we don’t have a microwave, I just popped the bun in the toaster for a few minutes.

It’s going to be hard not to eat this again tonight….and tomorrow night!

Snooze You Looooooze


This morning I was having a MAJOR motivation meltdown. I had gotten up early and driven back from my parent’s house so that I would have time to go to the gym before work. But when I stopped in at home, Max and Hazel were really hittin’ me up with their puppy faces.


In case you can’t read puppy faces, a direct interpretation would be: “hi mom. I love you. snuggle me. pet me. play with me. give me treats. I love you. do you have treats?”

So as they shot me with their love daggers, I tried to think about how much better I feel after I go to the gym. Sweat = Happiness

But it wasn’t working. The pups and the couch were winning.

So I loaded up my pictures from my mom’s birthday supper, and remembered the BIG ol’ slice of this:

And by the time I had finished drooling on my computer, Max and Hazel had began their fourth nap of the morning.

Motivation Found!

It’s easy to leave the puppies when they’re snoring….mainly because….well….they pass a lot of gas when they sleep.


Thank you guys SO much for the input on my Mom’s birthday cake! I was all set to make the caramel and then realized I was all out of butter Sad smile I had to get creative in my pantry, and made it work.

Gluten Free Chocolate Cake Sandwich details on Monday! I’m still tweaking the recipe. It’s not quite perfect, but I basically made a large “cake ball” for the center layer.

My mom’s birthday is this week, and I have been put in charge of the dessert, aka the birthday cake! I’ve been going back and forth for days, and I’m really getting down to the wire.

Step Into


Spring Rolls!

A few weeks ago I was perusing the Asian Foods section at Whole Foods. I’m always looking for some new marinades and sauces made with gluten free tamari. I love Thai food, Japanese food, Vietnamese food, Chinese food….etc. And I miss those flavors.

When I saw these guys peeking out from the bottom shelf

tons of recipes came to mind.

But I was skeptical. I had never made spring rolls at home. Even when I ate gluten. So for my first attempt, I took it slow. I planned to just try a few with plain veggies.

I love fresh carrots! Our farmer’s market was BRIMMING with carrots.

I sliced the veggies matchstick style and mixed in one tbsp. gluten free tamari and two tbsp. gluten free orange sauce.

To moisten the rice wrappers, I used a plate that has a raised rim. Filled it with water:

and submerged the wrapper.

You want the wrapper to be completely pliable.

Shake off the excess and water and get wrappin’!

I filled my wrappers a little too lightly, but I was nervous about it tearing. But let me assure you, you can stuff these guys FULL.

I can’t wait to experiment more with the fillings.

So I just got the phone call from my mechanic. After a $70 tow in to the shop, it’s going to cost $329 to get it going again. I guess it’s relatively cheap, and I’m lucky it’s not thousands of dollars. But with my LA trip coming up, this was SO NOT in the budget!
