Load it up

While it’s a common method for some runner’s to “carbo load” before a race

my bestie sister and I decided to…go in another direction.

My sister followed this recipe for baked shrimp scampi. The only changes were she nixed the parsley and only used 1 stick of butter instead of 2.

In a word:

SCRUMPTIOUS. Several words: tart, buttery, garlicky, smothered shrimp

Served alongside:

twice baked potatoes with broccoli and KAWLY-FLOWER

And even though it looks fancy, my bestie said it was super simple to prepare! Although, I did get all dressed up for supper. Lil’ Gluten Loves Me even did my make up!

Apparently, this is pretty to a two and a half year old Smile

Hope your race went well! That meal looks amazing! I love shrimp with baked potatoes! I like to stuff my potato with garlicky shrimp and top with feta cheese!
