Just Add Sprinkles

Lil’ Gluten Loves Me agreed!

But in the busy-ness of the weekend and fun, I didn’t have any time for cooking! Between eating, drinking, shopping, laughing, playing…birthday cake pancakes had to take a back seat.

So I extended my birthday weekend to include today! Sort of like a government holiday Smile

Gluten Free Birthday Cake Pancakes

You’ll need:

Adapted from How Sweet It Is

1 1/2 cups Gluten Free all purpose flour

3/4 cup Gluten Free yellow cake mix

1 tablespoon sugar

3/4 teaspoon baking powder

pinch of salt

2 eggs

1 1/2 teaspoons Gluten Free vanilla extract

2 cups milk

Combine your dry ingredients and then add your wet! Simple as that. You want the batter to be like a pancake batter, so aim for that consistency.

I recommend adding sprinkles to the batter.

And when you pour the batter,

I would add sprinkles again. Just in case Smile

Cook until brown. Top with a simple vanilla glaze: 1/4 cup powdered sugar, a dash of GF vanilla, and milk. Add the milk 1 tbsp. at a time, until you get your desired consistency.

Top your pancakes with as little or as much glaze as you like.

And then top with more sprinkles.
