You need two pieces of Udi’s bread and a big dollop of your favorite pimento cheese. Smother and sandwich. Take a small frying pan and heat over medium high; spray with cooking oil. Place your beloved sandwich in the pan and let it toast. Toast. Toast. Toast. Until it’s golden brown.

I am so jealous. I'm living out of the country right now and can't get my precious Udi's bread. It's been months. I can't wait to get home in another month and have all the sandwiches I could ever want. Haha!
What brand pimento cheese do you use/know is gluten free?
I use a brand called Augusta's. They sell it at my local Harris Teeter. It says 'gluten free' on the top.
