I’m so glad that quinoa was the first food you guys chose for me try. Because now that I’ve tried it, I’m not sure I can live without it!
Last night I prepared one cup of quinoa according to the box. While it cooked, I sauteed baby carrots, pepper, green beans, yellow squash, and zucchini. Sprinkled with salt and pepper, added a splash of tamari, and then combined the two.
We served it with these light, crisp sheets of butter lettuce.
I love how versatile quinoa is. And it doesn’t sit like a brick in my stomach once eaten like rice.
And because I can never eat a meal without a condiment, I also topped it with a dollop of smoky yogurt: greek 0% fat plain yogurt, horseradish, smoked paprika
Tasty! Better than PF Chang’s GF lettuce wraps? No. But nothing really is.
