Dear Gluten Free Grilled Cheese,

We need to talk.

We’ve been “dating” for a few years, and while we may go months without seeing each other, my feelings for you will never change.  You are so delicious with your layers of creamy laughing cow wedges, crispy bacon, and rich hummus; all smoooooshed between two crispy, buttery pieces of Udi’s Whole Grain gluten free bread. You’re just really good, inside and out.

And well….I think I love you. A lot.

But… let’s not tell Redbridge…ok?

...and I'll be headed up to Whole Foods during my lunch break tomorrow to buy some Udi's. Holy wow I want that sandwich!

I have a serious crush on Udi's bread. I also just discovered their chocolate chip muffins...amazing, especially when warmed up a bit first! Even my gluten loving husband likes them.
I need to get more creative with my grilled cheese options (I usually just do cheese....) That sounds so good!

do you know what's crazy. I don't think I've ever put bacon on my grilled cheese before!!! What have I been thinking!

Man I will have to try that! Looks great! Just recently started cutting the gluten out of my diet....After all this time I found I have a mild intolerance too it. What a difference without it! I feel a lot better!

Also good: slather pesto sauce on the inside of one slice of bread and butter on the outside, then a layer of thin sliced fresh tomato, a slice of mozzerella cheese (or 2) and the other piece of buttered bread. They are a little hard to flip but taste amazing, kinda like pizza.

I had stop drooling over the picture and make this right away! I didn't have any bacon or hummus on hand, but I had the Laughing Cow cheese wedges and I always have Udi's bread on hand. That was one of the best grilled cheese sandwiches I have ever made. With the addition of bacon, I think this would be restaurant-worthy. Wow, it was good.

i personally like it on Rudi's multigrain bread and i use american cheese and cream cheese with whatever meat we have left over from dinners past :) it's amazing and soooo ooey gooey!
