Almost all of the blog posts that I have read in the past few days have been about New Year Resolutions. I’m amazed by how many bloggers even revisit their last resolutions and show how well (or not so well) they kept their promises. Strong willed ladies!

I’ve never been one for resolutions. I’m terrible at starting new habits, but I can follow through if I stay SUPER motivated. Plus blogging helps, because once I tell you guys then you can help police me. I always do well during lent, but that’s because it’s only one month. But there are some areas in my life that I would like a little switch up, so I’m jumping on the New Year bandwagon.

I’m not ready to share my resolutions quite yet, I need a little more time to think about it. I mean, if these are new habits that I intend to keep for an entire year (!!) then I better be extra sure. But here’s a recipe for a delicious pasta salad that would be great if you were resolving to eat more veggies, courtesy of Chef Parrish!

Parrish’s Jam Packed Pasta Salad – best served right away!

Cook your gluten free noodles according to the package. He used Tinkyada brown rice spirals. Drain and pour in to a large mixing bowl. While the noodles are cooking sauté 1 chopped red pepper in one tablespoon of olive oil until caramelized and brown. If you like garlic then you can also sauté 3-4 garlic cloves cut in half. CHOP : 1/2 onion, 1/2 cup green olives, one cucumber, 2 cups cherry tomatoes and add to the mixing bowl with the noodles. Add one container of feta cheese crumbles in to the mixing bowl and the red pepper and garlic with the excess oil. Mix well and serve immediately!

He also wanted to add that you could add more or less of every chopped veggie, just dependent on your own taste preferences.


Parrish and I have started rewatching LOST, starting with Season 1. We’re already to episode 15 and I’m sucked in again! Such a great show!!

Equally as delicious and a trillion times more nutritious and better for your blood sugar and waistline: swap out the pasta for quinoa.
