How Now Brown Cow

 

Yesterday morning, I woke up STARVING! But also nervous. I really wasn’t wanting to spend more time in the bathroom. But I knew that there was no way that I could go to work without eating.

So…I kept it BROWN.

And crossed my fingers I could keep it DOWN…and not out!

In the mix:

1/3 cup water, 1/3 cup skim milk, 1/3 cup Gluten Free rolled oats, 1/2 tbsp. chia powder, and 1/4 banana sliced; topped with a dollop of peanut butter and a sprinkling of gluten free graham crackers.

I wish I could tell you that everything went well and I felt great after breakfast, but that would be a flat out lie. So for lunch I stuck to crackers and ginger ale. It stayed down, so in the afternoon I decided to take a BIG risk and get an iced coffee.

As if sent down from heaven, this coffee was not only delicious, but it didn’t send me running. And it did keep me going through out the afternoon.

And I couldn’t have been more relieved, because my bestie Alex was coming up from Wilmington and I really wanted to be able to enjoy supper with her!

Did I ever enjoy it!! :) I made this recipe for the second time and I just love, love, loved it!

The recipe is from 101 Cookbooks, and it’s perfect for gluten and gluten free folks alike! You make a thick veggie burger, cook it, cut it open, and STUFF IT!! We stuffed ours with fat free cream cheese, tomato, and avocado! No bun needed. :)

It’s a Sick sort of Happy

 

I am physically and mentally DEMOLISHED. I have been working for 7 days straight, with my fair share of early mornings and late nights. Plus I have been lifting, carrying, flipping, and dragging rugs…which are not light my friends!

And last night I was glutened. BIG TIME. I unknowingly ate two tortillas of a brand I have never tried (Mission White Corn). While wheat isn’t listed as an ingredient, I’m pretty sure they’re dirty. I woke up at 7am this morning and was a hot, watery mess in the bathroom. Ugh. I was pretty much nauseous all day, and everything I’ve eaten has gone straight through me.

Unfortunately, Parrish bought the tortillas. And as he tells it, the Yellow Corn Tortillas by this brand have gluten free on the label. The White Corn ones he purchased did not say gluten free, but he read the ingredients and thought they seemed okay. I researched it tonight, and their website claims they are gluten free. But the other items on my taco were cilantro, chicken, and Greek yogurt.

So I’m just not sure. In all honesty, I don’t want to eat anything. I can’t even describe how awful I felt today, and I still had to go to work. Their was a bigger job at hand.

And it’s all because of my job, that I am hanging in there right now. Because while I may be physically and mentally spent, I am on an emotional HIGH!!

We sold over $45,000 dollars worth of rugs in 5 short days!!!!! We were in total bliss when we locked the doors today (after reloading 350 rugs) because the artisans in Pakistan really REALLY really need support. And more than that, they need to get back to work!! And have their looms replaced and their homes rebuilt. And I could really go on…but I’m so tired.

And still feeling pretty sick :(

And the Award Goes To:

 

Three crazy fast days…work, work, working. And unfortunately, Parrish and I didn’t have time on Sunday to menu plan, so we decided to skip the grocery store and save the money. At the time, we thought it would be an awesome way to save some cash; especially since we’re getting married really, REALLY soon.

Bad idea.

For a gluten hater, planning is imperative. I really don’t know what I was thinking. So I’ve been relying heavily on my Tasty Bite goodies, and I’ll have more reviews for you guys soon. But yesterday I had a tiny window of time before work, so I decided to change it up.

Yep, that is the extent of the veggies available in our fridge right now! We have NO spinach, NO carrots, NO squash…and for dairy…we have milk. NO CHEESE!! Not even a crumble for a mouse. 

So I scrambled :)

Served on my beloved Udi’s Whole Grain Bread (BTW, if you still haven’t tried Udi’s yet, then I want you to email me and tell me one good reason why not. Then I will tell you FIVE good reasons to try it)

It was good…but it would have been better with a little mayo…or cheese! :)

Today I woke up at 5:30 AM and went to my little part time job. I was a smart girl and wore my running clothes and packed my work clothes. This seems to work for me. It forces me to go run.

After an AWESOME 3 miles, I went to work with SO MUCH MORE energy! If I can keep this up for two more weeks, I’m going to reward myself with a YMCA membership! I will have successfully gotten up and exercised and for two months. And in all honesty, if you follow me on twitter then you know that it’s becoming a bit addicting. FINALLY ;0)

For supper tonight, Parrish and I decided to do something SUPER QUICK. So quick and delicious, they deserve an award! And the award goes to: MELLOW MUSHROOM

Sigh. Love it. And ya’ll know what I ordered! Need a refresher?

Feeling Fiber

 

Oh man!! I’m actually really glad that I waited until tonight to post this recipe because I can now tell you, that this recipe WORKS! Not only were these pancakes delicious, but they held off my hunger for 4 1/2 hours!!

Food is Fuel Fiber Pancakes – Gluten Free of course!

To make, you’ll need:

1 cup milk (I used 1% Organic Valley)

1 cup Gluten Free Pancake Mix (I used 365 which they don’t make any more because they are a doofus)

1/3 cup Gluten Free oats (I use Bob’s Red Mill)

1 tbsp. Chia Powder

1 egg

Mix all the ingredients in a large bowl. Heat a frying pan on medium heat.

Cook each side evenly, and to your desired “done-ness”; which basically means, some folks like pancakes smooshy and some like them fully cooked!

I topped my GF pancakes with 0% fat FAGE Greek Yogurt and blueberries. Super Tasty!

Oats and Chia are fiber power houses, and I personally think fiber is the jazz! Aside from the benefits in the bathroom, (which as a person with Celiac never hurts!!) it also helps lower blood cholesterol and blood sugars. It also has been shown to aid in weight loss, which I certainly won’t shy away from. PLUS it helps you stay full longer, which I LOVE! :)

Starting today, until Sunday, the non-profit I work for is hosting a rug event! We’re selling over 350 hand knotted, fairly traded rugs that are made by 850 families in Pakistan. Due to the flooding and devastation, this rug event is even more important than ever. So pray for me this week…no days off :(

Hopefully this gluten free gal can keep it together!

As you guys may remember, the super sweet folks at Tasty Bite sent over some of their foods for me to try and review. In all honesty, I had seen there offerings in the store before, but I always thought “Ehh…”. I’m just not big on pre-packaged grocery foods.

Aww man. As I just posted that picture my mouth started watering. These lentils were ahh-mazing. Imagine the most delicious beef chili you have ever eaten in your life. Now, imagine it with creamy, hearty lentils and red beans instead of beef. Heaven.

I mean, read these ingredients!

water, tomatoes, lentils, red beans, onions, salt, butter, sunflower oil, chilies, and cumin

Simple. Delicious.

Confessions

 

Confession #1

Over the past few months, I’ve been having some CRAZY thoughts. It all started when I made these fantastic fried shrimp, from scratch. As I stirred herbs and spices in with a gluten free flour mix, I really concentrated on what I was doing. I wrote down every teaspoon.

I carefully fried each shrimp in a small batch. I spent over an hour in the kitchen, dredging each bite and pressing on the gluten free flour.

I took over 50 pictures. I paid attention to the lighting. I adjusted shrimp to get a more even shot. I carefully wrote out each step of this recipe and gave the end result it’s own Glamour Shot session…

and then I kept it all a secret.

I blame it on the shrimp.

At first I just didn’t have time to post. But then I started thinking about this recipe, and how much time I had spent working on it. I wondered if this were the type of recipe that someone would pay to have. The seed was planted.

I want to write a cookbook. That exact sentence started creeping in to my daily thoughts. I can honestly say that before these shrimp, it had never crossed my mind.

Ever.

But now, it’s like I can’t shake it. I researched publishing companies. I looked in to proposals, and wrote an outline.

And I feel guilty. I don’t like keeping a recipe from you guys. Especially a recipe for Lime Kissed Shrimp that I know you would love. It just isn’t my style not to share with you. The minute I decided to make gluten free mozzarella sticks, I knew I would post it that afternoon. I couldn’t wait for you all to try it at home.

There’s no real point to me telling you that I’m keeping secrets from you. I more just want to actually put my intent in to writing. That way I will follow through.

I want to write a book. I want it to chronicle my first two years gluten free, with recipes sprinkled throughout. Something along the lines of Gluten Hates Me: A Guide to Life Without Gluten or Gluten Hates Me: A Guide. The title is the hardest part. Not hard: These shrimp will definitely be in there.

As will this pork chop.

But until I’ve really given this dream my all, I can’t share these recipes. But one day, I will. And then I’ll have you all over for dinner and we can drink wine and eat shrimp until we burst.

I’ll even serve the gluten free mozzarella sticks. :)

Delivery! Delivery!

 

It has been a day of special deliveries in the Gluten Hates Me household! As soon as I came home I noticed the stack of boxes on the counter and the pile of envelopes!

Yep! The RSVP’s are starting to roll in!

Which is a good thing, because I can now officially say, “I’m getting married in less than a month!” Eep!

With the RSVP’s came a few regrets, and an early wedding present! Parrish and I weren’t sure if we’re supposed to wait until after the wedding to open the presents…so we opened them!

So much fun!! We received a set of 4 super fancy schmancy wine glasses from Parrish’s Great Aunt and Uncle. Great indeed!!

But wait there’s more. :)

I also received a few food deliveries! The first one came from a company that I had heard about, but had never tried.

Food Should Taste Good chips! When this sweet lil’ company asked if I would like to sample their offerings, I was overjoyed! I’ve seen these same chips on other blogs, such as Kath Eats, and I was thrilled that they were gluten free!

They got a lot of good going on! For flavors, I received Olive, Lime, Blue Corn, Chocolate, and Sweet Potato. Parrish and I immediately ripped in to Olive.

So good!! If you are an olive fan, you’re going to love these! So much more substantial than a chip too. Much more like a cracker. Maybe a chipracker. Can’t wait to try all the flavors. Get used to seeing these guys in the GHM house!

You should also get used to seeing Tasty Bite!

The last package we received today was a last minute decision, but Parrish and I feel good about our choice.

P.F. Chang’s gluten free chicken lettuce wraps!!

Did you know that P.F. Chang’s has an entire Gluten Free menu!?! And they do it right! When you dine in the restaurant you get a plate that specifies you’re gluten free, and when you order take out every package is stickered!

Most recently they’ve added some new beef dishes to their ever growing GF menu, but P and I are still suckers for the lettuce wraps.

It’s All About Compromise

 

Can you guys believe that I’m getting married in…a month!?! It honestly feels like just yesterday that I told you guys the great news. The closer I get to the big day, the more time I spend reflecting on how wonderful Parrish is, and how happy I am with our relationship. And yes, I am still weepy.

Many years ago, Parrish and I both learned the importance of compromise. And most recently, I’ve realized that we can even compromise with food. As I’ve told you guys before, Parrish can eat pretty much whatever he wants. He’s a 6 foot 4 bean pole who plays soccer every weekend! So last night when he suggested we have grilled chicken Caesar salads, I cringed. I suggested a fresh veggie grilled chicken salad and he cringed. So we compromised.

We both started with a bed of freshly cut LOCAL romaine lettuce. Then…

he topped his with Caesar dressing, parmesan cheese, grilled chicken, and croutons.

I topped my salad with lemon juice, salt, pepper, avocado, grape tomato, and grilled chicken.

He was happy. I was happy. COMPROMISE :)

This morning I started my new VERY PART TIME job, where I get to help a sweet little guy get ready in the morning and then drop him off at school. I was pretty excited, as three years old is my favorite age! PLUS I’m going to use the extra income to buy my gym membership. I’m thinking about our local YMCA. One of my volunteers loves it there. Any Y lovers out there?

Since I woke up before the sun, I knew I needed to pack my breakfast to go. I just wasn’t hungry at 6am. Gluten free breakfast on the go…you guys know I struggle with this! But I decided to take a leap of faith, and try raw oatmeal. So I tossed in 1/3 cup gluten free rolled oats, 1/2 tbsp. chia powder, and 1/4 cup Bakery on Main gluten free granola.

When I was ready to eat breakfast, I stirred in one container of Stonyfield Farms Fat Free yogurt.

a delicious mess! I ate around 8:30, and it held me over until noon! I typically like to eat my lunch around one o’clock, so when I pack this again for Friday i think I’ll add in some fresh fruit. Or maybe a protein powder?
