For over two weeks, I have been trying to make peppermint paddy brownies. They’re going to be the perfect blend of a brownie base with a creamy peppermint layer, topped with chocolate frosting.
The first time I tried to make them, I opened the cupboard only to realize I didn’t have any brownie mix. And since the brownie foundation is key…yeah, I never made them. Then the next attempt there were no eggs. And then today, when it seemed for sure that the stars had aligned, I realized I was out of powdered sugar.
But by that point, I had already started baking the brownies. So I improvised.
Friends, these are not peppermint paddy brownies. But they aren’t half bad.
Actually, they’re very, very good.
I’m calling them “Don’t lay a finger on my Gluten Free Butterfinger Brownies”

But first, back to those brownies!
I baked the Betty Crocker gluten free brownies according to the box and let them cool. Then I took four mini Butterfinger bars (left over from Halloween) and crushed them with my meat tenderizer. I sprinkled the crumbs over the cooled brownies, covering it 90%. Then I stuck the pan back in the oven on broil and kept a CLOSE eye on them. Once the Butterfinger had melted I pulled them out and let them cool.
Not to toot my own horn, but… TOOT TOOT ! These brownies are good. The brownie layer is thick and fudgy and the top Butterfinger layer is crispy and buttery. Mmmmm

I have made something similar with Andres mints. But I add them on top before baking.
Now I'm wondering what loads of other mini candy bars would end up like!

Smashed up candy canes! They turn brownies into delightful holiday treats!
I love jazzing up my brownie mix! My favorite is peanut butter chips or mini peanut butter cups, but now that the holidays are coming, I like the mint chips too.
And when I'm feeling like having mexican, I put in a little cayenne pepper and put cinnamon chips on top. Yum!
Oh man, drizzle those babies with peanut butter? Sprinkle them with chocolate chips? You've got yourself a stew going.
Have not tried any gluten free brownies as of yet so I'd really love to try these.
I top my brownies with brownies. Sorry I haven't tried my favorite recipe gluten free yet, but it starts with peanut butter "blondie" batter, remove half of it and add cocoa, put that part in the pan first,top with the peanut butter batter and mini choc chips on top. So it's choclate brownie on the bottom half, peanut butter brownie on the top half and mini chips dotting the top.
Mmm, I have a mission tonight!
What? I can't believe nobody said BACON. Caramelized w/ maple sugar BACON. Or coffee-bacon (sprinkle bacon with instant coffee, bake, crumble and put on the brownies.
It's "patty," not "paddy." Like a burger or other roundly-shaped food items. :)
I'd top mine with chocolate chips... what's better with brownies than more chocolate!! nom nom nom ;)

Andes mints. A peanut butter, cream cheese, powdered sugar mixture crumbled on top. Chocolate cheesecake. Oh my... how I could go on.

Round this time of year I love to crush candy canes on top! :) I have tried with raspberry jam as well and it's super tasty.

Mmmmm.....brownies. I would put salt and caramel onto of my brownies. It's all my favorites in one place. Chocolate. Check. Buttery Caramel. Check. Salty goodness. Got it. It's the perfect combination and taste experience in my mouth.

I love mint chocolate brownies, so Mint and chocolate icing would be my idea of a topping! or crushed almonds!

calories aside, i would load that brownie with Reece's peanbut butter cups, Vanilla ice cream and hot fudge. Now that is what I call a brownie sundae.
I would (and do already) top my brownies with white frosting. Layering it on very thick. :)

Like you, I'd put butterfinger on top of the brownies- I'm a huge fan.
The coconut frosting that usually goes on German chocolate cake is AMAZING on brownies. If only I could find a good dairy free substitute for sweetened condensed milk.
Probably a chocolate frosting made with coconut oil and coconut milk so my dairy free son could also enjoy them!
I'd drizzle them with peanut butter, hot fudge and top them with a a scoop of vanilla, or dulce de leche ice cream!
Besides all the other great ideas already listed, I might try sprinkling some shredded coconut on top! I love coconut anything. :)
So many good ideas- I'd have to top with carmels then do a side of coconut ice cream.
