My Future Career


I think I may open a gluten free sandwich shop.

I was off of work for Labor Day, and I knew I wanted to grill. I was really craving a burger, but I gave up buying ground beef about 3 years ago. So we went with my favorite stand by!

Ranchy Chicken Burgers – and since it was a holiday, I kicked it up a notch with my favorite hot sauce:

The best part of Ranchy Chicken Burgers, aside from being super tasty, is that they are really easy to make!

In a large mixing bowl: one packet sharp shredded cheese, one packet ranch seasoning, one packet ground chicken

Start mixing! And if you’re feeling feisty, add some hot sauce! I patty it out in to hand size patties.

Then get your grill on until done!

I sandwiched mine with Udi’s Whole Grain Gluten Free bread, fresh spinach, caramelized onion, and a smidge of horseradish sauce.

And since I caramelized the onions, I toasted my bread to give my bite a crunch!

I paired my super tasty sandwich with:

an ice pack.

Surprise, Surprise. :) After my accidental 5k, I was sore but not terrible, so yesterday I set out to run…although without a set goal. I was able to do ONE MILE until my ankle’s and shin’s screams could be silenced no longer! It’s amazing what a little ice can do to get you back in business! I should have iced on Sunday. Silly, silly.


I’m sure every bride feels this way, but I honestly can’t believe that I’m getting married in 11 days. Eeep!!!

I wish I could be telling you guys more about my upcoming wedding, but I’m trying to keep the details a secret, so that my guests can enjoy everything for the first time without reading about it first. I’m going to have TONS and TONS of DIY themed posts once it’s happened, but until then I thought I would give you just the tiniest peek of the dress. :) I’m trying on my dress every 3 days at this point and it continues to fit like a glove. A gorgeous, gorgeous glove :)

Dude if you opened a sandwich shop, I bet you'd make Udi's so much money!!! hahaha. Good luck on your 11 day countdown!!! I can't wait to read the post-post. hahaha

Awww I hope you had an amazing wedding! We just got married on July 3rd! Your honeymoon pics looks amazing! I want to open up a fast food restaurant for people w/allergies...you can do the gluten free stuff! I think that'd be awesome!
