Guest Post – Gluten Free Pizza!

My name is Jillian. I'm 21 years old, and I live in southern California. I am the writer of Funny (allergen-free) Girl, a blog dedicated to gluten, soy, corn, and dairy-free baking. I found out my mother has food allergies two years ago, and since then I have dedicated myself to creating delicious delights for my family and for you!

While Marlow is away celebrating her and Parrish's wedding, I am here to try and fill her oatmeal eating, Redbridge loving, Max walking shoes. (I don't think I will be able to, but I'm not going to let you know that!)

First things first. Who here, during their gluten eating days loved to eat cold pizza for breakfast?

How about a show of hands?

Yeah, me either.

If I was eating pizza it needed to be warm, it needed to be cheesy, and mostly it needed to be good.

Sadly, since going gluten-free I have yet to find a gluten-free pizza that if good when it is freshly baked, loses it's je ne sais quoi, when it's reheated. So pizza for breakfast is out of the question. Or is it?

How many of you shop at Trader Joe's? It really is the best store. I am physically in love with their Gluten-free Brown Rice Tortilla's.  They are whole grain, gluten-free, soy-free, corn-free, and dairy-free.

My favorite way to eat them is baked in the oven and topped as . . . breakfast pizza!

Oh my goodness, these things are delicious! Brown, crunchy and beautiful! Breakfast pizza's are super easy to make, and very healthy too. Plus, you can add any leftovers you may have on it. Making these healthy, delicious, and green!

Breakfast Pizza's

Serves 1

1 Brown Rice Flour

1/4 C. Hunts Basil, garlic, and oregano Sauce

1/2 C. Skim Fat Mozzarella Cheese

1/8 tsp Fennel Seed

1/8 tsp Italian Seasoning

Plus any other toppings you might like e.g. chicken breast, veggies, onion, bell pepper, olives, sausage.

1. Heat oven to 440 degrees F.

2.Line baking sheet with parchment paper.

3. Place tortilla in pan and add toppings.

4. Bake for 10-12 minutes.

5. Allow to cool for 2 minutes, and cut with a pizza cutter.

6. Serve immediately.

225 calories before the extra toppings.

Funny that this is today's post. I was thinking about sandwiches and all the things I can have again thanks to Udi's.
When I was a kid we had one of those sandwich presses and we'd make pizza sandwiches with cheese and sauce. I recently bought one when I saw it at Target for $7. I immediately went home and made an Udi's pizza sandwich and it was as good as I remember from being a kid.
