Guest Post: Bread Basics

It’s a delight to be a guest blogger for my sweet niece, April. Gluten hated me long before I was diagnosed back in 1985. Diagnosis was a relief.

I said goodbye to gluten and never looked back.

I assure you that back then there were very few gluten free products available and most were by mail order. The only company name I can remember was Ener-G Foods. While their baking products were OK, their ready made foods left, and still leave, much to be desired.

Because there was no bread worth its price and making tasty bread and baked goods was difficult, I got used to not having baked goods.

Quality, tasty breads began to surface just within the past 5 years. As each emerged into the market place, I anxiously tried most of them, but one look at the calorie and fat count, not to mention the quick disintegration in a sandwich, quickly sent me back to a no-bread status.

Fast forward….Udi’s.

You know the scoop on this delicious bread from this blog, but what I want to highlight is the gift Udi’s is to the waist line. Because I am a researcher, I love tables. So, here’s a review of several breads highlighting the ones that are waist friendly and yummy.

The Yum Factor includes both the taste and the ability to make a sandwich that will not fall apart, and does not have to be toasted to taste good. I am including Weight Watchers points to give you an idea of which bread has good calorie-fat-fiber ratio. On the Weight Watchers Plan, one gets a daily points allotment based on their current weight. If you weigh 200 pounds, you get 20 points for the entire day. That said, the 1 point breads are such a gift! Note the Amish Bread. More on that yummy choice in another post.

I have not tried Udi's bread since they do not sell it where I live in Bangor, ME. I have been gluten free for a little over 1 month and I feel almost back to normal. I do miss bread, a low cal/fat bread. I would love to make a sandwich using Udi's bread with my homemade turkey burger, lettuce, fresh tomotoes, and spicy mustard. Hopefully, the Natural Living Center here in Bangor Me will start to carry Udi's GF bread soon. Thank you for subbing for Marlow, I love her blog.

What a great post - thanks for the comparison of breads!!

My ideal sandwich (and frequent favorite) is hummus, tomato paste, Trader Joe's red pepper spread, spinach, and a dash of cheese on Udi's whole grain bread, heated up in a skillet a la grilled cheese. It's fantastic!!

I LOVE LOVE LOVE Udi's bread. I made an amazing sandwich with it the other day. BBQ chicken using Sweet Baby Ray's spicy BBQ and spread with Laughing Cow's new Chipotle cheese. Holy moly it was awesome, I didn't think Udi's could get better until I spread that on it.

I've been excited to make grilled cheese sandwiches again since Udi's came out! I love to try all different comibinations of ingredients. Last night I had a delicious grilled cheese with Udi's, Jarlsberg cheese, green chiles, and onions. :)

I just bought some Udi's for the first time, although I have been eating it for a couple of months at Jason's Deli, which is testing gluten-free sandwiches in my area. I am going to make turkey and cheddar with cranberry chutney.

i seriously cannot remember life before Udi's!

I've actually been just buying & giving loaves of it to people I know that are GF, and they all LOVE it.

I haven't made one yet - but i have been wanting to make a reuben sandwich with this at home! (either a real reuben or turkey reuben, YUM)

Udi's bread is AMAZING! Just this weekend, I tried your recipe with Udi's in the Foreman grill and nearly cried, it was so delicious! I ate it with laughing cow cheese, avocado, tomato, and 2% provolone - delicious!

Great Post! I have not had a sandwich, only small slices of Katz Bread, since going gluten free. I would say I've been yearning over a sandwich more so recently in the beginning.

One of my ideal sandwiches would be the typical sandwich I always had: low sodium applegate turkey, american cheese, salt/pepper, low fat ranch dressing, hummus and sometimes onions! Somewhat typical,somewhat odd but so delicious!

Another day another sandwich, this one will be a quick and obvious favorite of mine... GRILLED CHEESE!!! Love it and miss it. I never did anything fancy to it, only the basics :)

My favorite with the Udi's is a cucumber sandwich and sprouts with a little bit of cheese. A grilled cheese sandwich is a close second using pepper jack and cheddar! Udi's is the only GF bread I eat.

So much Udi's love. I'm lucky to live in Colorado and be able to find Udi's- so if I win send it along to Kelly in Bangor Maine, as I'm a native Mainer and want her to try this!

I love taking Udi's to my local sandwich shop and getting turkey, bacon, mayo, onion and pickles on an Udi's Bagel. I'm hoping that D'Ellies in Sugarloaf, Maine will do that for me in a few weeks when I go home for a visit. Only there I get a turkey with shredded carrots, pesto mayo, hots, cucumber and a homemade pickle on the side. At home I make grilled cheese with peperoni or ham tucked inside.

Looking forward to traveling cross country with Udi's next week.

A delicious sandwich? Udi's bread with turkey, provolone, mustard, avocado, basil, and tomato. Or leave out the turkey and provolone and do hummus, avocado, sprouts, and tomato. Yum!

i made an udi's pizza last night!

for today's sandwich - I think I would do smoked ham, pickles, tomato, and horseradish! YUM... bad-breath-fest.

My ideal sandwich: Homade chicken salad with walnuts, grapes and gluten/dairy free mayo. Top that off with some romain for extra crunch. Perhaps a little boring but I just LOVE chicken salad! I really miss the ability to pick up a chicken salad sandwich from Panera.

I tried Udi's for the very first time two days ago while visiting my daughter in Austin. She took me to Whole Foods for lunch and for the first time in years, I had a sandwich. And most importantly, it was so incredibly delicious, I almost cried. They used Udi's white bread, pesto, smoked turkey, cheese, spinach and tomatoes and then grilled it. Incredible! I'm still dreaming about it. Now my challenge is to find Udi's here in Houston.

One thing I never thought I'd have again is grilled cheese but boy howdy Udi's makes the perfect grilled cheese sandwich. I use pepper jack with a little mayo some garlic salt and tomatoes. Not a regular grilled cheese but awesome none the less.

I'd go for a basic roast beef, pepper jack, tomato, lettuce and mayo, with a dab of mustard.
We love Udi's. My son first tried it when he went to Colorado on a school trip last year and we've been having it shipped to PA ever since. Just a week or two ago it started arriving in local supermarkets - What a savings that will be!

I looooooooooove Udi's! The best gluten free sandwich bread ever!!! I'm thinking the ultimate sammy would be an Elvis special - peanut butter, banana, bacon...grilled. YUM!
