I did finally drag myself off of the floor yesterday, but I’ll admit it was hard! I’m pretty loyal to my sleep cycle, and when I get thrown off track I fall behind FAST!I was determined not to nap yesterday, as I was concerned it would keep me from falling asleep last night. But then I did end up taking a cat nap curled up in Parrish’s lap. I woke up feeling a little refreshed and ready to tackle the grocery store!
Parrish surprised me when I got home from my trip by already having our meal plan for the week finished! Complete with shopping list :) For supper last night he planned steak kabobs and I was excited to try our new marinade. The Good Housekeeping brand of marinades is on sale right now at Harris Teeter, and I had been wanting to try the Chili Lime. (The Red Wine Shallot is SUPER GOOD) I marinated the strip steak for 2 hours, before cutting it in to chunks and skewering with onion and pepper.'
A few weeks ago, my bestie sister and BIL Scotty passed down there old gas grill to me and P. I’m sure you’ve noticed that the grilling recipes have been on the rise! The gas grill is ten times easier to use than the charcoal. Although, I am a little bit nervous about igniting it myself! :)
These kabobs were delicious!! That marinade is bangin’. I LOVE grilled onion so much.
I ended up going to bed really early last night and when I tried to wake up this morning I couldn’t even peel my eyelids open. Needless to say, I missed my morning exercise. However, I am COMMITTED to running this afternoon. Period.
After hitting the snooze button 3 TIMES, I wooed myself out of bed with the promise of coffee and oats!
Whipped Blueberry Chia Oats
In the mix: 1/3 cup water, 1/3 cup skim milk, 1/3 cup Bob’s Red Mill gluten free oats, 1/2 tbsp. Chia powder, and 10 blueberries added during cooking. Topped with a dollop of 0% fat Fage Greek Yogurt and another 12 blueberries.
The blueberries added during cooking gave it a hint of sweetness, and the dollop of Greek Yogurt gave it a creaminess that I loved!! This bowl was perfect. Here’s hoping it holds me over until lunch.
Okay, off to make my lunch for today. I think I might be feeling a…sandwich. :)
