For the past week I have been feeling POOOOOOOOPED!

BIG. SLEEPY. MONDAY. EYES. Too bad this was on Friday! :)

Wednesday and Thursday night I stayed up WAY too late, and by Friday morning it had all caught up with me. And even today, I feel like I can’t recover!

I have been living on this:

Which is probably a main factor in why I still feel so run down. Caffeine is a vicious cycle. Just when I think I’ve kicked my Diet Coke habit, I have a moment of weakness.

And technically the Steaz wasn’t my fault! I went to Whole Foods to get a delicious Kombucha only to find a ton of apple juice in it’s place. Apparently kombucha is being pulled from shelves because it has been found to have more alcohol than labeled on the bottle. (Which is probably why I like it…)

Funny thing about feeling like crap, I don’t feel like cooking. I literally didn’t eat supper Thursday or Friday. And if you know anything about me, you know that I LOVE food!! It’s nights like those that make you wish you could just grab a sandwich or some chicken tenders on the go. But the next day I’m super glad that I’m gluten free and can’t easily give in to cravings. So tonight I pulled myself out of the funk to make two dishes I’m currently crazy about.

Ripe Tomatoes from the Farmer’s Market, Chapel Hill Creamery Farmer’s Cheese, and Basil from Parrish’s garden. Tossed with Balsamic, salt, and fresh cracked pepper!

Love it! I honestly think I could eat Moore’s on everything. I love the smoky sweetness!

************ Now if I can just find some energy to clean the kitchen! :)

Too bad - I'm lucky to have never drunk much pop - & totally avoid 'diet' stuff - that salad looks SO good! I get my CSA share tomorrow - still have salad greens from last week - had a pretty light meal day today myself . . .
My coconut milk kefir is one constant - I usually drink some AM & PM, & when it's thicker, like cream cheese, put it on salads. I've been avoiding soy (not totally - but not going out of my way to eat it) as I've been reading about it depressing the thyroid, which is often already troubled with gluten issues!!

Diet Coke ingredients:

Carbonated water: This can irritate your digestive system, triggering Irritable Bowel Syndrome.

Caramel color: According to the Journal of American Medical Association, there’s some evidence that caramel coloring could increase insulin resistance, which can lead to diabetes.

Aspartame: This chemical sweetener replaces the “bad” high-fructose corn syrup found in regular Coke, but could be bad for you in its own way. There have been studies for years linking aspartame to cancer, and while the FDA has claimed that there’s been thorough testing on the chemical, not everyone is convinced. In 1995, the Department of Health and Human Services submitted a list of aspartame side effects to the FDA, which included headaches, seizures, neurological problems, and abdominal pain, and nausea. Also, when aspartame is ingested, it breaks down into a variety of chemicals, including formaldehyde. Phosphoric acid: This ingredient gives Diet Coke a tangy taste. Oh, and it can also be used to remove rust on surfaces. Phosphoric acid has been linked to low bone density in several studies, as well as kidney stones. The phosphoric acid binds with zinc, calcium, and magnesium in your lower intestine, which would be good for your bones, but the caffeine in Diet Coke makes you pee it all out before that happens.

Potassium Benzoate: This preservative keeps your Diet Coke fresh. Coincidentally, it also gives fireworks that annoying whistle.

Citric acid: You know that slightly citrus-y taste you love so much in your Diet Coke? That’s thanks to citric acid. It can ruin your tooth enamel and lead to decay.

Caffeine: Your body absorbs caffeine within 40 minutes, causing your pupils to dilate and your blood pressure to rise. It can also lead to ulcers, since it increases the production of stomach acid.
