First Time for Everything

 

Oh friends…where has the time gone? It has been crazy stressful in the world of Gluten Hates Me, and as much as it’s exciting…it’s also weighing me down.

Let’s start with breakfast, and then first bit of stress. This week consisted of what I can only call “The Dreamboat” of gluten free oatmeal!

The first bit of stress is that Parrish and I have started the process of hopefully becoming first time home owners.

Disappointed

Since moving, Parrish and I have been paying nearly a grand each month in rent, and in Wilmington the rent wasn’t much cheaper. Every time I pay my rent, I die a little inside. Over the weekend, my bestie sister really drove the point home for me, STOP PAYING RENT!

The only thing that was holding us back was our own perception that we can’t do it. I’m quickly discovering that we can! Which is exciting BUT…there is a little voice in the back of my head that keeps yelling “Are you kidding me? You’re can’t do this, grown ups do this. You’re not grown up!!”

So stay tuned in the coming weeks, and feel free to give me any advice! Seriously. Luckily, we do realize that we ARE FIRST TIME home buyers. We’re not expecting to find our dream house, but we are hoping to find a nice place we can call home!

And of course my second bit of stress is the wedding. Again, exciting but stressful. I hope to be buying my wedding dress next week (AHHHHH!!!!) I’m hoping that I like the dress as much as I do online!

Typically when I’m stressed I eat…unhealthy foods. It’s something that I know about myself, and if I’m super aware, I can bypass eating the bad stuff. Meal planning has been super helpful, but Parrish and I didn’t plan for this week. All day today I could feel the stress eating away at me, and so in the early afternoon I started looking for a healthy recipe. That way by the time I was starving I would have a plan.

My go-to for healthy recipes is Heidi Swanson of 101 cookbooks. Her recipes are typically easy and always approachable. I was craving a veggie burger and found everything I was looking for in her ‘Ultimate Veggie Burger’ recipe. In the post, Heidi talks about making a veggie burger that doesn’t need a bun…um hello?!? You guys know how I feel about gluten free buns! This recipe is perfect for gluten free folks! And…I guarantee gluten lovers will devour it too!

To find this recipe, just visit Heidi’s website! I followed the recipe to the letter, except for the toasted breadcrumbs. I used Glutino’s Gluten Free Breadcrumbs. They worked perfectly!

I stuffed my veggie burger with a laughing cow cheese, avocado, and hot sauce!

I honestly can’t believe this recipe worked out!! Remember the last time I tried to make a veggie burger? Eesh. Not only did this veggie burger hold together, but it WAS the bun!!!

I enjoyed this recipe so much, that I immediately went over to Amazon and purchases Heidi’s book!

Yeah, I eat unhealthy food when I get stressed too - but usually don't care. Good on you for being disciplined!

I have never heard of someone wanting to eat carrot sticks when they are stressed! Yuh know? Those look so good! I bet it would be great with a little fresh mozzarella, avacado, and bacon! yum. Oh by the way, I changed my blog url. I put the new lnk under my name above.

So glad you like the DCD...I always put it in oats, too! Yum :) I tend to eat sugar when I'm stressed...anyone who wants to eat healthy when they're under pressure is seriously lucky! Have a great weekend!

Yea on looking into buying a home!!
several ideas:
1) work with a locally owned bank or S & L! I'm self employed, so it took some work on my part (bringing in bank statements - even tho it's 'my' bank, etc) but they don't sell loans to other companies, & more than 90% of the money stays in our community!
2) I pay a bit extra each month, which goes to principle (you can also make 'split' payments - paying 2x a month) - this shortens your loan time (& the amount of interest you eventually pay)
3) I pay my insurance & taxes seperately, so that amount isn't tacked onto the loan - but you have to rememeber to set $$ aside for those!
4) Put a decent amount down - again, that makes the loan (& interest you pay in the long run) lower :)
5) Check with the power & water company on usage over the last year at that address - it will give you an idea on energy effieciency - they'll often do free 'energy audits' of your home as well, & often have programs to support increasing the energy efficiency
6) set aside some $ for the eventual repairs (will the roof need work in a few years? things like this will be on the inspection report)
'buy the worst house in the best neighborhood' is good advice - if you have the skills to do the improvements!! :) Good luck!

& re good food choices - I've been drinking green smoothies in the AM, a la green smoothie girl! A bit of juice (pineapple, mango, apricot) & a bunch of greens - spinach, dandelion, chickweed (I'm in NW Oregon, & there lots of wild weeds & overwintered veg here already) kale, etc - put them in your blender & whiz away! I added a bit of coconut milk yesterday - yummy & such a nice way to begin the day!
A diabetic friend washes & cuts up veggies (carrot sticks, celery, etc) & keeps them in one of those sectioned containers in her fridge - when she gets home hungry, she has a quick READY healthy snack! She preps more veggies AFTER she's eaten, & puts them in the sections.
& my favorite 'treat' GF snack is tapioca that I make with coconut milk & some dried fruit, w/a tsp of honey - & often some carob powder (naturally sweet) & or cocoa powder mmmm

exciting news!! we are actually in the middle of hte process right now! we had been looking for a place to buy for about the last 9-10 months ( i know, really long time ) and finally found a place- got an accepted offer this week!

We had the inspection today & that went well... so we'll see.

It can definitely be overwhelming, but it's going to be so worth it!

that veggie burger/bun looks so great!!!!

First of all - your dress is gorgeous and simple and wow! I so love it :) Secondly - have you ever tried Kamut? It is called Kamut Khorasan Wheat and is sometimes tolerated by those who cannot eat gluten. Our family tried it a few weeks ago and love it! Hope this helps you :)

I have never had much luck making veggie burgers from scratch but your pictures..those look SO good..I'm thinking I will have to give it another try :)
