Every morning for breakfast I had been making up some Namaste Gluten Free Pancakes. And they were great! But....I had to make them. So for during the week when I squeeze in every ounce of sleep I can before work, these just weren't working. I had read another person's blog that said they made extra pancakes on the weekend and then refrigerated leftovers for during the week. However, I am not the type of person that can have a huge stack of hot pancakes in front of them and have leftovers!
So when my co-op started carrying Van's Wheat Free/Gluten Free frozen waffles, I was hopeful. Oh buddy, these suckers are GOOD! I would never know that they are gluten free! I first had the buckwheat and they were good, but then my next box was Homestyle. OOHH!! Really good. Crisp with lots of flavor! I also am trying to live a low sugar lifestyle, so I don't use syrup BUT these waffles are good with just a smattering of Earth Balance!
I have an appointment with a nutritionist actually tomorrow, but I have been doing a little bit of reading on my own as well. I had read that it was important to get in some protein in the mornings so I have also been pairing my morning waffles with a hard boiled egg. Yum! Dipped in mustard...really yum!
